No more Birds Sausages? They were always one of my favourite foods, admitting the recipe had changed over the last couple of years, not the same as the original. I remember the original Mansfield shop when it was just off Albert street, Where Lucy's caffee is now. If you went any time after twelve, you wouldn't be able to get any sausages, would have been all sold out....What is Christmas going to be with out sausages and their sausage meat? My mother always cooked the sausages around the turkey, as I do now (did) and believe it or not they tasted even better!!!! And as for the sausage meat, fry a chopped up onion till soft, when cool enough add the sage and onion stuffing, then the pound of birds sausage, mix all together with a beaten egg. Put in a tin loaf and bake for about 50 mins..that and the sausage was the best thing about Christmas. That also was my Mothers recipe.. I always remember if I got asked to get some sausages from Birds by my Mother, when asking in the shop I always made a point of saying "pound of BIRDS sausages please" had to say Birds just in case they tried giving me any other, not that they had any other mind, but I didn't know that as a youngster, but didn't want to chance it not getting my favourites... Any one asking me 2what's your favourite food?" always answered " my mams meat pie, and birds sausages... ...Where's it gone wrong? you wonder. well in my opinion the quality of the sausage has been messed with over the past couple of years, you fry them and they split because of the quality, Once when you cut the cooked sausage with your knife, it was smooth as it was full of meat, now when you do the same it was crumbly, as it was filled with what ever it was I don't know. they were started to make the sausages too big, you would ask for a pound of them and maybe only get about 4, which turned out to be pretty expensive...I think if they had kept the good quality sausages, as I remember them, people would have kept buying. Other shops expensive shops have survived, the recession, look at the other Baird's shops the bakery one in Mansfield, they are very expensive but sell out in no time..Can't tell you how sad I am about the outcome of all this. lets hope they work it out get back to basics with top notch quality sausages... yours sincerely Kate T read more

We also won the overall best in show sausage roll at the very competitive National Products Competition. In March 2014.

Established in 1902 the company employees around 40 local people many of which have over 15 years service. Still owned and run by the original Bird family it is presently run by the 4th generation.
