We started with two pig halves and got to break down the pig with very minimal help from the instructor. We learned a whole lot and we got to take 25lbs home each. The whole environment/shop was very clean and organized. We did have a chance to look around the shop prior to the class and the owner was very friendly and answered any questions we had. While I didn't end up buying a knife from here, I do plan on it when I have enough in my budget to spend on a knife, as I'm not a professional chef. Gage (the owner) knows his stuff and will sharpen one knife for free when you come in and he does a great job. Cleaned up and sharpened my mom's Japanese knife that had gotten rusty.
