As soon as I walked in I was in heaven with this carnivore promoting meat market / butcher shop! They had some great looking fresh meats behind the counter at reasonable prices, an area with beef jerky and dried sausage sticks, and a freezer area with a multitude of sausages and other frozen items (rabbit, bison, et al). They had such a wide variety of different flavor infused sausages I couldn't help but pick a few out to take. I only had so much room in my suitcase so I selected the '7 Pepper Bratwurst', 'Philly Cheesesteak Bratwurst' and a pack of 'skinny dogs' (hot dogs). There were at least a half dozen more I would have purchased had I had that room in that suitcase of mine. They made it home safely with me (TSA did not confiscate [to take home to their own freezer? lol] and they are in my freezer awaiting the right time to indulge. I picked out two dried sausage sticks (maple habanero and jalapeno) to try, along with a slab of their teriyaki flavored beef jerky. Each was individually wrapped. I would later eat both the sticks and enjoyed them both, the jalapeno more so. The slab of jerky was for my son, but I tried it and it was very good as well - not too much teriyaki flavor, which I really am not a fan of. It had just the right amount for me and I should have bought some for myself. The young staff working the day I was there were very friendly and helpful, with one of them giving me pointers about meal preparations on the frozen sausages I selected; primarily the philly cheesesteak bratwurst (which I have never tried before, but sounded quite interesting). If you are a carnivore you should make this one of your stops, be you a local or tourist. If you are only into eating nuts and berries then give it hard pass.

It's a local butchery, with an incredible selection of meats. I bought several pieces of handmade jerky. They were all terrific - not heavily salted, but full of flavor and everything you could want when hiking and in need of protein. Hines Meat is a terrific and unexpected find!

Hill Meat Company…read more Hill's is a family owned and operated company that has been making pork products in Pendleton, Oregon, since 1947. Normally, Albertson's carries Hills Original Pork Sausage Links and their packaged Double Smoked Thick Sliced Bacon, as does Fred Meyer's. On 1/31/22, I was at the Albertson's located in the Hillcrest Shopping Center in Boise. I noticed they suddenly had a lot more Hill's products. I bought the Bacon & Hatch Chile Pork Sausage Links and some of the Fresh Peppered Bacon. Both were excellent! Prior to discovering Hill's sausage, I bought sausage links to cook at home maybe once or twice. Occasionally, I would order them for breakfast if dining out, but I had no interest in buying a package of it. It was fatty and delicious, but it just didn't seem that special. That wasn't till about three years ago when I unknowingly visited an Adam Hegsted restaurant in North Idaho. The place I stayed at gave guests the option of a free continental breakfast or a coupon good for $5 off of a breakfast at the restaurant next door. I opted to eat at the restaurant. Even though I ordered a simple breakfast of two eggs over easy, sausage and toast, I could tell from the presentation alone that this was going to be something special. First of all, these were the most perfectly cooked over easy eggs I've ever seen in my life, and I've cooked a few myself. The toast homemade sourdough, served with homemade Huckleberry jam. The sausage looked like regular sausage, but then I bit into one. Whoa! It was the best sausage I've ever eaten in my life. When my server came back I asked what brand of sausage they were using. The cook came out from back in the kitchen to chat with me. He shared with me that they used Hills Meats, and the name of the owner. I later did a little research and learned the owner was a James Beard nominated chef. Even though he wasn't present, he clearly set a high standard that was being well-maintained. Upon returning home, I immediately started to search out Hill's sausage. I was so excited the first time I found it and brought it home to cook. Then I tried the bacon and loved it just as much. If you haven't tried Hills, you're in for a special treat. The fact that a James Beard nominated chef makes a point to serve it in his restaurants speaks volumes. Highly Recommended!

Hermiston, if you're not aware is the watermelon capital of the world. Something about the hot days and cool nights makes for exceptional melons. I'm often on Interstate 84, there is family in Idaho, so in three summer months I capitalized on my geographic luck and slip off highway. Have you tried to find a seeded watermelon lately? It's not that easy. Do yourself a favor and get back to the seedy side. Bellinger Farms sits about four miles northwest of I-84 at exit 188. Go past the Pilot Truck Stop, through Stanfield and you're there! Fresh fruits, unique jams, preserves and jellies, a little candy and neat odds and ends line the walls. Super friendly staff too.
