I think it was a pair of tortillas filled with meat and some onions and cilantro topped with cheese that all melts around it and generally helps it keep it shape. That's a guess. I can't say for certain that my description's right but I can confirm it was delicious!! It was a wonderful reminder of one of the things I dearly love about my home and a delightful final meal in Oklahoma.
