He also told us that all the ingredients are sourced from the local market everyday. We got to try many dishes such as the salmon ceviche, bone marrow with jamon iberico, an out of this world calamari and kimchi sandwich, caramelized beef cheek, sardines with raw vegetables... and not one dish failed to deliver!
