Came to this restaurant because I had heard about the dishes with HUITLACOCHE which I really wanted to try. Arrived at 6:15pm and sadly, much like most restaurants in Puebla these days, the beautiful dinning rooms were without patrons. Do not take this as a sign of a problem with the restaurants; it is a sign of the Mexican economy, fear of travel to Mexico and results of the current US President's actions. In any event, there are two dinning rooms, the first one is less formal and only had tables for 5 or more, but has a beautiful carved wood alter and is inviting. We chose to go ahead and sit at large table in the informal dinners area. Wait staff was attentive and while I was attempting to improve my Spanish, I did ask for an English menu and the had them. Also the staff were happy to explain ingredients we had not heard of such as an edible semi-succulent leaf that accompanied 2 of my 3 dishes. The meal started with an amuse-bouche of the day, which was like tiny empanada. We requested margaritas mas fuerte and were happy we did. The next dish we both order was the both beautiful and tasty Tayuda Itsmeña. This dish is substantial enough to constitute a whole meal! My second dish was the salmon tartar which was delicious and equally beautiful. The salmon flavor was a bit overpowered, but I loved the sweet flavors of the mango sauce and passion fruit intertwined with the raw red onions and cabbage strips. For mains I had the chicken breast and my friends dined on the filet fillet mignon both dishes had HUITLACOCHE as an ingredient and both were delicious! The deserts were very interesting. My dinner companion enjoyed a sponge cake made with special leaves that was presented with crystalized parsley and arranged to look like trees in a terrarium. As for price, this is the most expensive restaurant I have been to in my week of dining in Puebla, however my (1person) total bill for 3 courses, a margarita and a still-water was $26.50 which is less than a main course alone in a less nice restaurant in California. The setting of this restaurant was and is amazing. We went during lunch. The food took a while to arrive at our table. It was cold and my pasta was not Al dente. Despite the room temperature food, the service was great and the flavors were good. I'm hesitant to return to eat, simply because of the low amount of people there and it took quite some time for the food to arrive to our table. I would go for the décor and setting. Perfect venue for an intimate dinner or date. read more

This restaurant came recommended by my compatriots who visited a couple of years ago. So perhaps, there were undue expectations. Unfortunately, this was the case and the service and food that was lauded previously did not live up to its billing. Mine was only one of two parties being served during a weekday evening. There were three waitstaff, but all appeared disinterested save hovering around the bar when not delivering food or drink. The menu was appealing and the food itself was good, but not necessarily stellar. Any recommendations from the waitstaff appeared an inconvenient question and they seemed to believe that their customers were better left to themselves. The atmosphere appeared sedate and at times eerie. At its peak that evening, there were three tables/parties being served. And any hustle or bustle was kept to a minimum. There were simply lulls between being seated and ordering, ordering and receiving your meal, and eating your meal and asking for the cuenta. All appeared to just do their jobs, nothing more and nothing less. Any spirit or life came solely from your own group and was not supplemented by the restaurant or its personnel. read more

Unique upscale restaurant in the historical district of Puebla. The atmosphere is very quiet and chic. The chef really takes time to present their food as an art form. I had the gorditas de alberjon, which consisted of bone marrow, two gorditas, grasshoppers, and corn. The presentation of the dish was so unique and pretty. Some may be grossed out by the dish but I loved it! The grasshoppers tasted like stir fried ground meat. They also have a variety of selections of entrees on the menu. We had complimentary breakfast here since the dining area of our hotel was under construction. They brought us fresh cut fruit with some kind of cream with granola and some kind of crispy bread with jam to start. The bread was yummy and crunchy and reminded me of packaged bread I had in Europe a long time ago. The fruit was refreshing too. Our meal comes with orange juice and eggs and beans, but they overcooked my eggs, so I didn't enjoy them very much. This place is fancy and they play American songs covered my other artists. Every morning, I ordered my eggs the same way, but they never seemed to get mine right lol. On our last two days in Puebla, our server mentioned that we could order something else and just pay the difference! We were excited to be able to get something else and ordered a few different things. Breakfast was much better since then and we started our day with a happier belly. The city of Puebla is best known for this dish and the most respected restaurant is "Entre Tierras". I was honored to meet Chef Fernando Gallego who shared with me so many "secrets" in order to make the perfect Chiles en Nogada. This restaurant serves the dish on 100 year old Talavera plates which are replicas of the one used to serve Don Agustin De Iturbide on August 28, 1821 as he signed the Treaty of Cordoba agreeing to the independence of Mexico from Spain. The dish was first served then which was created by nuns from the local convent. This year, we celebrate "Chiles en Nogada's" 200 year anniversary. If you notice, it is garnished with pomegranate seeds and parsey and served with a white nut cream sauce which together represents the colors of the new Mexican flag. The filing is usually 50% meat and 50% fruits with almonds and red pinenuts from Coahuil, cloves and cumin. The fruits typically are apple Panocheras, pears from San Juan, and apricots from Calpan. Local herbs are also used. It is a complicated and time consuming dish that is so delicious and makes your tastebuds so very happy. read more

Such a beautiful restaurant! The bread, herbed butter and salsa with it was a great start. We had the pueblan mole, an amazing seared tuna and an amuse bouche of a citrus ceviche. All the dishes were great and the restaurant in the day time has amazing lighting. The service was excellent but in my experience all restaurants in Mexico have top notch service, and this is no exception. read more

What a gem! We started with delicious cocktails and then moved on to delicious starters, entrees and dessert. I had tuna tartare in an avacado with edible flowers. The tuna was mildly seasoned to add wonderful flavor. My filet mignon was cooked perfectly and sat on a bed of red pepper sauce and vegetables. My husband had Peking duck tacos and a stuffed pork loin rapped in bacon and served with sweet potato purée. Everything was delicious! The service and atmosphere were perfect. Prices are one of the highest in the area but for the portions and service , well worth it ! About 20 dollars for 260g of Rib eye , couldn't finish it but that's just me . Chef knew the difference between Medium rare and Medium well , we had two plates of those and they were perfect ! Great food options for weight watchers , calorie counters, vegetarians and seafood lovers - There is sting ray on the menu ! Great wine options , cigars and Mezcal . This is one of the best meals you will have in Puebla. The restaurant is lovely, unique and upscale. It has 3 rooms to choose from but I prefer being in the courtyard in front of the beautiful wooden wall that makes you feel like you're dining in a church. Armando is the manager and I recommend you let him lead your dining experience and you won't go wrong. The fried squash blossoms, the nogales (seasonal) and the salad were all excellent. Well worth the price and your stomach will be very happy. The staff is extremely professional and makes for a memorable night in Puebla. read more

Entre Tierra gets an A+ for service and presentation. The food was delicious but not very memorable (other than possibly because of the presentation). I love spicy food, but the chipotle beef I had was just far too spicy. This isn't a complaint I can recall ever making. But overall, I'd say Entre Tierra is worthwhile, I would consider returning. read more
