If you are considering a mobile wood fired oven, or recently bought one, the Fire Within Pizza University is a must. The Pizza University is three intense days of classroom and hands on learning. The University is held at the culinary school in Downtown Denver. The instructors are world class chefs that teach you practical skills in ingredients, equipment, making pizza, and to me the two most important topics - marketing and business. The instructors are very down to Earth, understand the pizza business, and most started from the ground up building their own pizza businesses and know what you are going through as a new business owner. I learned everything from purchasing supplies, recipes, prep, starting the fire, and actually making the pizzas. It wasn't all about making pizza - part of the instruction is on catering - planning appetizers, drinks, how much pizza to make, etc. The class culminates on the last day with a actual catering event. Trailers are produced at a high quality standard! Was able to pull a single axel concessionaire at 70 mph down the interstate with now sway or bouncing. Classes offered are a great intro to getting your feet wet in learning wood fired ovens. They allow you to have hands on experience while having the right amount of guidance. They will walk you through how to setup and maintain the ovens, how to make the pizza doughs and make the pizzas and even how to setup and facilitate events. read more

My wife and I attended this course and we are very happy that we did! The class was informative, detailed and the best part....FUN! We were not sure that we would go into the business, but would take the class as a fun weekend getaway. The weekend was great, the food was fantastic and now we are going into the business part-time.
