That said, my rating is based on the taste of their food and detailed review follows. Beef Tartare - it was an appetizer special and although I am a big fan of that particular dish, I have to say that this was the only dish that I had that night, that didn't do it for me. Instead of being hand cut (the way I like it), the meat was ground (which is a typical way beef tartare is prepared in Austria), so I will skip providing my rating for this dish. Top Blade Steak braised in red wine, served with polenta, fennel and roasted onions. 5 stars all the way! Melt in your mouth tender, beefy, juicy and combined with creamy polenta it was a star of the evening. Wiener Schnitzel made with pork meat. 4 stars. A solid version of Wiener Schnitzel and although it tasted very good, you can find a lot better versions of this dish in Sankt Anton. Austrian Ravioli stuffed with Porcini Mushrooms and cheese - 4.5 stars. Cooked to a nice al-dente and covered in warm brown butter. The stuffing was savory and thick and you could taste the porcini inside. Although a little more expensive than other restaurants in town, I recommend this restaurant for a nice romantic dinner in St. Anton.

For breakfast you get a selection of all the local cured meats, cheeses, breads/pastries, juices, cereals. All very fresh and brought in by the many local farmer/purveyors For lunch I had an applesauce amuse, a stellar classic Austrian schnitzel, a spatzle soup and local berry juice. Dinner is where Schwanen really shines. Chef Antonia Moosbrugger has a Michelin star for a reason. She and Chef Franziska Hiller go for the best local ingredients foraged, hunted and supplied by the immediate region. She also worked at 2 star Tantris in Munich, considered one of the top 50 restaurants in the world. I was seated in the the classic "Forest Lounge" dining room. A contrast of where the modern aesthetics of the breakfast/lunch service, this dining room has preserved classic interior design and it's laid out with historic touches and artifacts. Now my Austrian is non existent so Ill let the pictures do the talking. Had a sweet woodruff apertif, dendelion soup, some local cheeses, locally shot venison, an out of this world cheese spatzle, house made bread and a number of desserts. It was quite epic. The dichotomy however is that you're in a village far removed from the bustle of modern civilization, up in the mountains and into the forest. It is unique to be sure. Emanuel Moosbrugger who runs the front of house and overall hotel operations now is a veteran of Benu, Daniel and tons of other high end hospitality establishments so he knows how to take care of guests. Ambiance (5 stars): It has a very homey feeling to it. Especially with the rules that you share tables if you do not have a big enough party and no reservations. Food (4 stars): - Mixed meat (4.5 stars): would recommend. - Salads (3.5 stars): We got the mozzarella salad and a large mixed salad, both were good but came with too much sauce/creamy. - Goulash Soup: (4 stars) comes with bread, it was very hearty. - Traditional roasted pork, tyrolean bread dumplings with bacon sauerkraut, gravy. (4 stars) It was tasty, but nothing outstanding. - Apple Strudel with custard sauce: (4 stars). It was pretty tasty, but a pretty small portion, nothing outstanding. - Ice cream (5 stars): With the umbrella very good. For 4 of us the bill came to 106 euros. Service: (4 stars) The waiter at the start was trying not to speak english, but after a while he warmed up to us, and was friendly. My husband's choice of onion soup with cheese dumplings was the winner of that round. I had a beef broth with herb pancake which was ok but I felt like it was missing something. I had veal ragu on polenta while my husband had the crusted lamb...it was neck & neck in this round but I think my main just got in front. It was burnt freezer patties that they serve. (How do you serve food from a bag?) Waiter proceeded to parade the "food" on the bar stole next to the table and asked how he could instruct the kitchen staff to cook it differently in a sarcastic manner. The worst service and most disrespectful spectacle I have ever suffered! Re-heating in a microwave is NOT cooking! Pan-frying re-heated-frozen food is not cooking! Treating customers terribly is not what a restaurant should do. A shameful experience. I will not be back. No one in my party will be back. They are a SHAME on the hard-working restaurant industry and anyone should stay away!
