Hillbilly catering is NOT the way to go, was very unsatisfied with everything. Food was very dry, the communication was horrible. Asked 2months in advance to change a few things on menu and they never changed them. Told cater to come at a certain time and they showed up 2hrs early. We ran out of food even though we upped our count so we'd have extra just incase. NOT worth the money that was spent! We also paid to have them serve the food as well but just came dressed totally unprofessional for a wedding so had to send them away and do self serving. read more

I drove by Hillbilly BBQ on my way up to a job for work. On may way back it was around 11AM and they had just opened so I stopped in. They are located in a trailer in a parking lot off the road. I ordered a 1/2 rack of ribs and finished it in about 2 minutes. It was very good and I should have just bought the whole rack. These ribs tasted more grilled than smoked but that isn't a bad thing. The only thing I would have liked better is a thicker sauce. It was a bit watery for me. I've been passing this roadside stand for about the last 3 years. Having lived in the south (North Carolina 7 yrs/ Savannah GA 3 yrs) and also having had some really good bbq in various states while I was a truck driver, I've tasted a lot. This being said I have a tradition on football Sunday "Go birds"!, to have a good meal for the game. I wanted something different and I was craving some good ole BBQ, that I haven't had in so long. I've heard good things and checked in to yelp because I pretty think we are all foodies and give our honest opinions. I went here Sunday, I met the owner JR who was a really nice guy to talk to. He was very helpful in assisting me. I told him I wanted to try a bit of everything because I think it's unfair to judge a business on 1 item. I got a whole rack of ribs, beef brisket, pulled pork, potato salad, cole slaw and Mac and cheese. His sides were pretty descent, I enjoyed the Mac and cheese, the potato salad was mediocre and the Cole slaw was really good, something in it was different and gave it an earthy taste, Im thinking it was dill. The meats which were my real reason for going were all pretty bad to me, the ribs had no flavor, as if there was no rub used on them, also he doesn't remove the membrane on the back of the ribs, the ribs were unusually greasy, I found that odd, for smoked meats. The beef brisket and pulled pork were also flavorless. It's as if he buys the cheapest meat and throws it directly on the smoker. The meats I had were all tender and cooked decently, but nothing had flavor and the smoky taste was very very mild. I'm still on my quest for good bbq in PA. read more

I had the chance to try their pulled pork, Mac and cheese and potato salad. The Mac and cheese was....well just that. Nothing special. The pulled pork was top notch. Juicy, tender, nice crust, and perfect amount of smoke! The only thing that would make it better was if the sandwich are on a better roll...but no points off for that. Yummy! We've been passing by Hill Billy's BBQ forever but never got round to stopping by (or being able to slow down early enough to stop!) Today was a let's just do whatever kinda day and we remembered to slow down and try it. And we are off to a good start! We ordered the pulled pork BBQ sandwich and we were immensely satisfied! Juicy and tender. It was a hefty serving. We were happy that the bun really supported the meat. We particularly loved the smoke level. The sauce was well balanced. I've passed this BBQ Truck everyday for a few years now. Everytime I tried to stop, the place was closed. But I've read such good reviews about their food that I kept trying. About 2 weeks ago they were participating in the PA BBQ Fest in Leesport so I was I excited to go and finally try their BBQ. When you enter the festival you purchase sampler tickets so you can go from truck to truck and try 2 ounces of their brisket, pulled pork, ribs or wings without purchasing a whole meal or sandwich from 8 different stands. It's a pretty good concept that lets you judge which BBQ is your favorite. When I got to the Hillbilly BBQ truck they were giving out little tiny smoked cocktail weiners. Can't tell you how disappointing that was. My wife didn't even like her sample and tossed it. We had gone there specifically to try their ribs, pulled pork or brisket, not mini hot dogs that I could get at 7-11. Other BBQ companies were their and we tried some awesome foods. I high recommend stopping by the festival next summer. We had great time overall. The trip inspired me to purchase my own smoker and now I can make my own briskets and bbq whenever I want. read more

Stopped here on a whim today while driving hungrily through the area. FYI this is a food truck - so look for that and not a brick and mortar restaurant. There are several flags out front to catch your eye. Picnic tables are on the side for nice weather days and there is a large parking lot where you can sit and eat in your car if you prefer. It was super cold out and there were no other patrons at the time but I had a feeling it would be good ! Everything looked clean and the smoker smelled fantastic! I was greeted by the owner, J.R. , who was very friendly and welcoming. I decided on the brisket sandwich and was MORE than impressed. The amount of meat given was DOUBLE what I typically receive at other BBQ spots. I would probably skip the roll and just go for just meat next time ! The brisket was truly the best I've ever had of the many BBQ spots that I've sampled. It was tender and lean and full of smoky flavor. (Check out the pic I posted to see the portion !) Bonus points for my sandwich being served piping hot ! Not all that common for food truck BBQ. I made a point to get out of my car and compliment him before I left. We stopped here after a morning of hiking at Monocacy Hill. The food is excellent! We had the smoked wings with the sweet sauce, bbq brisket sandwich, and bbq pulled pork sandwich. Each plate was superb, the wings had a slightly charred skin with amazing smoke flavor and moist meat! The bbq brisket and pork had excellent tender meat and a smoky flavor with a beautiful smile ring. Each sandwich had a nice amount of sauce and was very balanced. This is definitely a hidden gem! The meat was fatty. It doesn't matter how long it's smoked or the seasoning and rubs used it was awful. Stopped in for a late lunch, just as it started to snow. Got the jalapeno sausage sandwich with sauce on the side (actually 2 sauces a sweet and a hot, both of which were good). Unfortunately, I was hoping for a sausage bursting with flavor as I had in Austin, TX, but this sausage was dried out. Will come back to give them another try and order the brisket and ribs. Want real food? Eat HillBilly BBQ. I ordered the pork rib platter, which is a 1/2 rack with two sides and plenty of sauce. I opted for sweet instead of spicy. Since the rack was cut thin, the cook kindly gave me a full rack at no additional charge. Ever see the movie Chef? This guy takes pride in his food like Carl Casper as played by Jon Favreau. Everything is pretty much made from scratch. There's a personal touch to the baked beans, the rib marinade and sauce are home made and tasty, and the mac n cheese was not from Kraft! I really wanted to like this place more than I did. I stopped on a Sunday at lunchtime and had the beef brisket sandwich and my cousin had the BBQ chicken. He said his was tasty. I found the brisket to be too dry and tough. The burnt ends on it had some flavor but all-in-all it didn't have enough smoke flavor, Now, the SAUCE (I got the sweet sauce) was the real STAR of the sandwich BUT, unfortunately, he was extremely stingy with it. I'd have bumped the review by at least one full star if he'd put a decent amount of sauce on it to help save the sandwich from dissolving into the sand dunes of the Sahara Desert. Stopped for the first time about a week ago after driving by it a bunch of times & having it on the 'to-do' list... I got the brisket sandwich, The brisket was tender and very flavorful and the souce complimeneted it well. For $6, the portion of food was good as well. I would have liked a heartier roll because with moist meat and sauce its easy for it to become a soggy mess which this sandwich became about halfway through... All said, a nice find and a place I'll come back to try more of the menu. read more

Was passing through Douglasville after an 8 mile hike, and decided to give hillbilly bbq a try. Boy, were we glad we did! The smoked hot wings were delicious. The pulled pork taco with coleslaw was absolutely amazing and so juicy and flavorful.
