SHADY OWNER & CANCELLATION POLICY- STAY AWAY...... I ordered tickets for a mixology class for my girlfriend and I, but she got covid two days before the class. I tried to email the owner, Devin, to reschedule our class, but she said she has a strict 7-day cancellation policy and that she couldn't reschedule or refund us, but we could transfer the tickets to someone else. So our options were to give the tickets away, show up and risk my girlfriend's health and the health of others in the class so we could get our money's worth, or just eat the tickets. How can someone possibly enforce a 7-day cancellation policy in today's post-covid world, knowing the CDC guidance is a minimum 5-day quarantine if you test positive? Her excuse was that she's a one-woman operation, and that all of her classes fill up fast. That doesn't make any sense. If they fill up so fast, why do you need to lock everyone in seven days in advance? Shouldn't you be able to easily refill those spots? Additionally, she mentioned 8 other couples in the same class we had tickets for requested to reschedule as well and she denied them all. So I have a feeling she is making a good amount of money off people who don't even end up getting to use their tickets. This policy is predatory and she is taking advantage of people. sososo much fun. I bought a mixology class for my boyfriend's birthday. There was about 8 other people in the class, which was the perfect size class for Devin to help everyone equally. The first half hour or so was a run down of the history/science behind mixology, and then the next hour we got to make our own concoctions with the foundation that she provided us with. I loved that it was not pretentious or made us feel isolated for not being liquor experts. My boyfriend and I learned so much and really loved the class. My wife and I went to Hollow Leg's mixology class and had an absolute blast. Two favorite parts: 1) Devin is a fountain of knowledge and a fire hose of energy. I felt like I was in school on the day you get the cool substitute who teaches you all these fun facts that you actually want to know and get to still have fun with your friends. 2) The variety of fresh ingredients! Devin had a plethora of fresh juices, fruits, herbs, botanicals, homemade syrups, and personalized bitters & tinctures on hand. From your classics like simple syrup and cranberry juice to unique things I've never tried before like special grape juice from a Midwest winery, sorghum syrup, and kimchi (I put kimchi is my cocktail!) The class was two hours so I felt like I got to learn a lot of things about cocktails I had never known before like that the Bloody Mary has roots in Chicago, the difference between bitters & tinctures, and how my tastes & senses line up to different cocktails, while at the same time got to make myself 3 robust cocktails. Definitely left her place feeling great :-). One critique was of the drink cups we used ...I wish they were clear plastic so I could see what was in every one else's unique concoctions. She was such a great teacher and was full of energy. They have a great set up with the classes taking place in an apartment style building with a rooftop and full service kitchen. Will want to come in the summer to take a class on the roof! The class itself is a DIY class with Devin helping you make your own concoctions along the way. She has ingredients that are all fresh squeezed and natural with no added sugars. You can put together the most unique drinks! Devin had me try a Kimchi, orange juice, jalapeno and gin drink that I would have never in a million years tried at a bar, but absolutely LOVED! I bought tickets to Mixology 101 on a Friday night for my boyfriend's 24th birthday. After reading the event description and Yelp reviews, I still didn't know what to expect. Basically, It. was. PHENOMENAL!! The event takes place in Devin's apartment, which is a beautiful, huge, aesthetically pleasing space. She even has her own private rooftop with views of the city skyline, so I'm definitely coming back when it's warmer outside. There's free parking right outside on the street. She starts the class off by teaching you the different aspects of a good drink (as well as very fascinating tips and tricks) and walks you through the steps of how to make a drink. We each made 4 drinks - there were 4 different types of alcohol to choose from (whiskey, vodka, tequila, gin), many juices and liquids (ranging from a variety of fruit juices to coffee), bitters/tinctures to add, sugary syrups, herbs/fruits/peppers to muddle, etc. There are no wrong ingredients for a drink, she said, so it was fun mixing concoctions and trying things I never would have tried. Devin is a ray of sunshine who is passionate about what she does (did I mention she runs this all by herself? Girl boss power). She's pretty much a drink whisperer and can make any drab drink taste absolutely amazing. We had an absolute blast and recommended this to everyone for a fun date night/girls night out/corporate event. read more

A Bloody Good Time! My husband and I attended Hollow Leg's Bloody Mary Class this past Saturday, and could not have had a better time. Devin is a ball of energy, and her personality combined with the setting makes mingling and learning a breeze. To paint you a better picture -- imagine an entire living room lined with various ingredients. We started with house-made tomato juice and vodka followed by a umami station which included some amazing ingredients like kimchi, clam juice, pickled walnuts (that's right, who knew there was such a thing), and worchetershire sauce. Next stop was herbs -- fresh from Devin's garden - including cilantro, thyme, rosemary, and parsley. Then spices - Garam Masala, Cayenne, Paprika, Curry, White and Black Pepper, and Coleman's Mustard. From there your adventurous side was tempted, with 4 varieties of garlic, 2 salsas, fresh horseradish, fresh peppers including jalapeños, scotch bonnets, cayennes, and habeneros. A pit stop for citrus, and it was into the blender for a ONE OF A KIND combo. Oh, and the garnish! Local Bacon Ends (read: thick cut deliciously smoky pork candy), Blue Cheese Olives, Mushrooms, and Local Cheese. If I had any sort of critique it may be to allow guests to explore with the base liquor. I thought of this after the class had concluded, and I am sure Devin would have been more than happy to throw out a bottle of tequila. But in contemporary terms, a Bloody Mary can be a "Bloody Maria (tequila)", a "Red Snapper (gin)", or a tricked out Michelada (beer) All in all -- CHECK IT OUT! It's a great value, and if you are looking for a follow up to a Friday night, that will get your Saturday back on track. This is for you! read more

My wife signed us up for our anniversary - and I didn't know what to expect coming in. I was completely blown away by Devin's energy, knowledge and skill. The class was held at Declan's in Old Town and is not designed to follow a recipe like anyone else could do, but to experiment with different sugars, bitters, juices, and alcohol based on science/taste. Devin is able to taste every crazy combination and give advice to turn it into a knock-out drink, no matter how wild you went with combinations (e.g. coffee, tequila, maple syrup, tart cherry juice mixture). AND you're able to do this three different times to try different combinations. The bitters are all made from scratch and so unique. I honestly can't wait to come back and have recommended this to all of our friends. read more

We took Devin's Mixology 101 class as a private event with myself and 8 girlfriends. It was two hours of good times, laughs, discovery, and education. First of all - Devin is great. She's professional, fun, thorough, kind, and a wealth of interesting information. I actually learned and retained quite a bit of what Devin taught us - which can be hard when consuming alcohol. Second of all - Devin's event venue is wonderful! Gorgeous space with a totally surprising and breathtaking view of Chicago. Took this class in person at The Reveler as part of a Sunday group class -- I LOVE taking different one-off classes like this one, and have taken several cocktail classes before - and this was by far the very, very best! So impressed by Devin's incredible energy, endless knowledge, and professionalism when it comes to the art of making cocktails. Not only she make mixology totally approachable, but also kept us laughing the whole time. Not gonna lie, I was a little annoyed at first. Nothing on the Eventbrite description said the Mixology 101 course was in the back of a bar - it just listed an address and all the reviews talk about it being at a home. When I googled the address, it showed a residence next to a bar, so that's where we planned to go. Once we got to the address, the door was locked and there were no familiar names on the buzzers...ok. Not to mention it was snowing with a 5° windchill. After fruitlessly searching for a phone number to call, we figured we'd get out of the cold and check the next door bar and see if the staff there knew anything about Hollow Leg, to which they just pointed to the back room. I'm a very organized person, so it irked me that there was literally no mention of the Irish Nobleman Bar in any of the correspondence for the event. Not off to a great start. But as soon as we met Devin, her warm and friendly demeanor snapped us out of our annoyance and we had a wonderful evening. Devin is SO knowledgeable on all things alcohol, and it was really interesting to learn the science behind cocktails. And she is an absolute natural at presenting/speaking; you couldn't find a better person to teach you! So the premise of the Mixology 101 class is this: first she gives you a bit of a background about herself, and then goes into the basics of taste and smell and how they affect your experience when drinking cocktails. I learned a lot! Then she gives everyone Ball jars and has you stop at each "station" for your alcohol, bitters, sugars, and bases/mixers (and I have to say how much I appreciate her support of local/small businesses!! Fight the man!). Then if you aren't in love with your concoction, she gives it a little taste and BLOWS YOUR MIND when she tells you exactly what it needs. And she was spot on every time!! The rest of the time is a bit of a free for all while you make two more drinks, testing different combinations and mingling with the other guests. The class was mostly couples, but it'd also be great for a bachelorette party or just a group of friends. It was my Christmas present for my husband, and he definitely enjoyed it. I'd like to take another class with her, most likely in the summertime so we can check out the gorgeous view all the other reviews talk about! I don't think I would recommend this for a bachelorrette party or larger groups. There was less instruction, and it was more of a free for all when it came down to making drinks. Also, for the price point (9 people and $70 PP), using liquors like Jose Cuervo, Svedka, and gin and whiskey out of plastic bottles seemed like a rip off. I wanted to get my boyfriend a mixology class for Christmas this year and initially looked into booking a class at a place like Violet Hour or Koval, but they were all booked. However, I'm so happy I found Devin's class! The class takes place in the back of the Irish Nobleman Bar (I don't think she's operating out of her condo anymore like some of the previous reviewers mentioned). Devin had stations set up for alcohol, bitters, sugars, and mixers, and after she gave a brief background/introduction, she set us loose to make our own cocktails. We had a blast coming up with our own ideas for recipes. My boyfriend and I whipped up some truly disgusting drinks at first, but after Devin gave us one quick tip our drinks ended up turning out great! In addition to being super knowledgeable and helpful, Devin is an extremely smart, energetic, and talented speaker.
