While watching the grill I could not help but admire the two short-order cooks moving like seasoned dancers in a greasy, well-worn ballet. One slaps down bacon with a sizzle, the other flips eggs mid-air, never breaking rhythm. The griddle hisses, spatulas clink, and plates slide down the counter in a choreographed routine they honed to a science. It's delicious. It's greasy. It's slightly chaotic.
