This all made sense as the highly rated and reputable Paella restaurants were open from 1-4:00 or so. One thing for sure make your reservations before you get to Valencia. We were lucky and got a table at 3 a day before. Smaller/cozy spot and looked like they had a 2nd level. We started with a Sangria and a Majou. For appetizers, it was the recommended Gambas with Chili Aoili-exquisite -I was really concerned that we couldn't get any better after this. The Bread with Aoli and olives was also tasty. Paella Valenciana (with Rabbit/Chicken) is the authentic one and has to be ordered a day in advance. We ended up ordering the Seafood (de Marisco) Paella which can be ordered same day. Filled with all types of seafood-delicious! Table next to us ordered the one with Lobster which looked like a winner also. Service was excellent! With the two sisters who were Owners helping with our table. They've been around since 1951. Would highly recommend!

Longer if you are in the heart of Valencia, but it is worth it for the award winning paella and seafood. You are surrounded by rice paddies and you know it is a great local spot when there are other spanish folks and the servers speak a little english. Luckily the menu is in spanish and english. Service is great, nice and laid back, enjoy your food, don't rush through it style. The white wine sangria was delicious and refreshing. We had langostine and prawns and the special paella with iberico ham. Every grain of rice was very flavorfull! If you plan to take a taxi back, they staff are kind enough to call a taxi for you, keep in mind it will take 30-40min for the taxi to get to the restaurant. Your alternative option is to take the #24 bus at the center of town back to Valencia which leaves once per hour, check apple or google maps for the time.

I sat upstairs, overlooking the front of the restaurant. Canela has a nice ambiance of a white table cloth/wine glasses on table setting. Female server was very on-point, pleasant. A small "tapa" of hummus on top of small tostadas were provided after ordering which was nice. I saw that other tables were offered shots of some liquor as an digestif, but perhaps that were for people with larger orders? Since we just came here for the paella, that's what we just ordered. I believe it also came with bread. Paella did take some time to roll out, which is understandable, ~20mins. I'm not sure if the dish was soo overhyped, but I found Canela's version too salty. I expected it to have more of a saffron taste, but it was more salt/rosemary. Looked well-presented though! Overall, I cannot recommend the paella here, as it wouldn't be something that I'd order again. However, it seemed as though it was a popular dish to order since all the locals, in surrounding tables, had it for lunch.
