I have noticed this in Italian restaurants where there is not one dedicated server per table but just really who is free. 4 different people served me and let me give the run down: one guy was very rushed and brusque and when he was carrying a ton of plates at once, expected me to help him by grabbing a plate, one guy was super sarcastic and gave me attitude when I asked for salt (his response was something along the lines of "that's really funny that you want salt", the lady was very polite, and the guy who cleared my plate was very nice. Seems like they were getting a big group in so they were rushing people. I understand that. But the attitude about the salt was not necessary. I spoke with the cashier and explained I thought the food was undersalted and I may prefer salty foods; however, I could not explain the rude service in Italian. #reasonstolearnitalian. Would come back here just to spite that waiter after I learn Italian and hear him making rude remarks and then I can make rude remarks back in Italian. Otherwise, come here for decent tasting food and big portions --- just don't expect to be blown away by the service.

Walking through what can only be described with what looks like an alleyway that was brightly lit up with a lot of restaurants and stores, and a very busy walk way that connects a lot of the locals and Taurus to shops and touristy spots such as the Trevi fountain. Outside had a lot of seating. It was beautiful weather. They had a long walkway filled with tables that were full and in front of the entrance, they were tables outside along the walkway, and there was inside seating. The outside was well lit with table lamps, and outside lighting. The front entrance was beautifully decorated with flowers. They had what I would call a restaurant MC someone who is interactive and brings in the crowd and is quick to get guests a seat at this very popular restaurant. The toilets are small, but this seems to be very common in Italy and most don't have a toilet seat. The service was amazing. We knew instantly we wanted to eat at this restaurant as I stated above there's a gentleman who was there both nights that we went to this restaurant who was quick to greet and get you prepared for a table. The service was quick. The food arrived quick to the table, and it was hot. The drinks were prompt to come to the table. Most of the employees spoke Italian and English. Everyone was nice but very business oriented and fast. It was a high volume restaurant so everybody was moving quick. Both nights we attended the restaurant, we got Aperol spritz and it was the best drinks we had in Rome. My mom got the gnocchi which was perfectly cooked in a meat sauce, and dollop of mozzarella. The roasted potatoes were cooked to perfection. They were soft and seasoned to taste. I ordered Caico e Pepe. It was the best fresh pasta and the right amount of sauce. Dining area was spacious with two tables literally perched on a small outdoor balcony. Unfortunately both were occupied when we arrived but I recommend coming early/later to see if you can grab one of those tables. We were quickly provided menus but unfortunately had a hard time getting the attention of our server for the rest of the meal. However, once we got our food, it completely made up for the poor service. We ordered the carbonara and another red sauce pasta with the same cured pork on the carbonara (can't remember the name) but the sauce, the texture of the pasta, the flavors... everything was absolutely perfect. We ordered a white wine to pair with our pasta which was delicious as well. By far, the best pasta we had in Italy and one of the best pastas I've had in my life! My only qualm for this Michelin Starred restaurant was that my course pacing was at the mercy of other diners who were much slower than I am being a solo diner, dragging this experience on much longer than necessary. [PART I - FIRST BITES] Moma is a Michelin starred restaurant in which I opted for their classic tasting menu, with some thoughtful adjustments for my growing lactose intolerance. The first bites consisted of four one bites and a salad which definitely left an unequivocally positive lasting first impression all around -- (i) The chicken foie gras pairs with bell pepper, providing an acidic onion-y sweetness foreground with a crunchy shortbread finishing bite. (ii) The pickled beet root is acidic and sweet without the daikon bitterness; I loved the umami saline pairing with this. (iii) I usually dislike tacos, but this cod fish taco in the shape of a Panipuri was to die for; the cod was turned as creamy and flaky as crab, with a crispy shell encoating while simultaneously removing that unpleasant stale tortilla chip taste I despise. (iv) One of my favorite beef tartares being mayo and dijon forward serving as flavor boosters that is enhanced by floral undertones. (v) Fuzzy wild greens and candied licorice rounds off these bites with an exotic refreshing earthy sweetness. Love this delicately constructed salad. Food: A+ Presentation: A+ [PART II - STARTERS] Moma's starters are definitely the highlight of the classic tasting menu, turning foods that may sound unenthusiastic into mesmerizing showstoppers!! (vi) First is their bread, which comes in a classic sourdough to be paired with a sicilian spiced evoo that is adds a unique zing; the other form is a very crispy bread chip that was quite fun to consume. (vii) Their seasonal garden was the best dish of the the night -- the transformation of ordinary vegetables into a full symphony of flavors and textures -- a creamy parsnip puree, with acidic pickled fennel, carrot, and cauliflower; there's tempura greens, and crisped rice cauliflower -- truly pefection!! (viii) Cuttlefish Tagliatelle -- pounding the cuttlefish to be immensely thin, then cutting it in the shape of tagliatelle, empowered by a deeply developed puntanesco sauce with olives and anchovies to have a beautiful balance of tomato and umami. Food: S Presentation: S [PART III - MAINS] Next on the menu is the mains, which consists of some of their more eye-catching dishes from the menu, which were still very high quality, but less show stopping than the appetizers: (ix) Truffle Miso Corallini -- the abundance of truffle adds a soothingly fresh fragrance and herbaciousness, but the miso herb oil combo comes on a bit saline forward. (x) Cod Linguine - This lactose-free substitution was constructed on the spot, using part of the cod to give it this sardine-like lingering umami that is pleasantly fishy. There's a touch of spice and celery that complements the seafood-forward pasta. (xi) Pigeon -- There's a fascinating dichotomy between the perfectionist tender nut crusted breast and the barbaric barbeque leg with an intense addictive flavor. The creamed foie gras and berry dust added a pleasant creaminess and acidity to pair. Food: A Presentation: A+ [PART IV - DESSERTS] The final bites of Moma's tasting menu consistent of some creative last minute lactose-free adjustments that hit well! (xii) Strawberry Sorbet -- Very simple palette cleanser that is fruity and refreshing with a bit of meringue; the presentation is not on par with the rest of the meal. (xiii) Pear Sorbet -- A very balanced dish with fall flavors, colors, and components. The pear sorbet works well with the hazelnut and caramel to provide a balance of flavors and textures. (xiv) Finishing Bites -- The brownie and chocolates were very rich and chocolately, which contrasts well with the classic sugar cube providing a refreshing sweetness. I was impressed with how many components were in each. The menu seemed to have predominately seafood and umami flavors. Some notable bites included pecorino ice cream, tortellini with licorice, risotto with salted fish, and the pigeon breast and leg. The cuttlefish pasta was a little odd to me; it was cut in ribbons to resemble fettuccini pasta, but the tomato sauce that came with it was very acidic (1/2 star off), almost not like a marinara sauce. The dessert bites were good, but were not as unique as the savory bites (1/2 star off): the main dessert was a polenta cake with whipped cream on top and the candies were just a basic gummy and a chocolate with hazelnuts. Note: Moma charges €5 for bread. It was good, but I wished they had informed me. I had purchased a prix-fixe menu and expected all food to be, um, prix-fixe.
