If you're visiting Madrid and want a restaurant that truly showcases the best of Spanish ingredients, put Filandón at the top of your list.
Just a short drive from the city center, Filandón feels like a countryside retreat. The restaurant is set amid beautiful gardens with a charming courtyard that's perfect for summer evenings, while the indoor dining room is warm, rustic, and effortlessly elegant. It's sophisticated without feeling formal, making it just as suitable for a family celebration as it is for a romantic dinner.
We came here to celebrate a birthday, and from the moment we arrived, everything was spot on. The service was polished yet relaxed, the atmosphere was lively without being noisy, and every course arrived at exactly the right pace.
Instead of focusing on one specialty, we decided to explore the menu.
We started with the Spicy Bluefin Tuna over Wakame Seaweed, Grilled Little Rock Octopus, Cantabrian Grouper Ceviche, and a platter of Oysters Spéciale de Claire. Every dish was incredibly fresh, beautifully balanced, and allowed the quality of the seafood to shine.
For the mains, we shared two of their grilled fish: Rodaballo (Turbot) and Besugo de la Pinta, both finished simply with garlic and chili, the restaurant's signature preparation from the wood-fired grill. The fish was perfectly cooked, moist, delicate, and packed with natural flavor.
We also ordered the Arroz de Carabinero, made with Spain's prized red prawns. Rich, intensely flavorful, and perfectly cooked, it was one of the standout dishes of the evening.
Although Filandón is famous for its grilled seafood, don't skip the meat. The aged beef chop was phenomenal, beautifully charred over the grill with a tender, juicy interior. It's easy to see why the restaurant is equally known for both its fish and its meats.
Dessert was just as memorable. The warm Zuberoa-style cheesecake lived up to its reputation with its creamy texture, while the homemade lemon cake provided the perfect light and refreshing finish.
To accompany the meal, we enjoyed a crisp white wine from Mallorca, which paired wonderfully with the seafood, followed by a smooth Rioja red that complemented the grilled beef perfectly.
What made the evening truly special wasn't just the food. It was the complete experience. The beautiful setting, attentive service, outstanding ingredients, and sharing the meal with family while celebrating a birthday made it one of our favorite dining experiences in Madrid.
Filandón isn't about trendy presentation or elaborate techniques. It's about exceptional ingredients cooked over fire with confidence and simplicity. That's exactly what makes it so memorable.
