Karlstejn Poucnik Stables is privately owned and not commercial. I found it via the concierge at the Old Town Hilton in Praha (Prague). The owner offers 2-3 hour horseback rides into the countryside with a view of the castle. Reasonably priced by US standards and she has an English-speaking friend who can accompany you. It is just a few streets from the train station in the village, a popular stop for visiting the castle. There are many pubs, shops and a few pensions on the road up to the castle.
