First of all, the meat was perfectly cooked, the gravy complementary to the meal as a whole. The plate contained a small bit of greens, mushroom and other bits. The flavor was fantastic and throughly enjoyed. My mother used to make spaetzle and his were every bit the part. I almost forgot they started with a nice salad, some of which I would not normally eat but the dressing was very good. I actually walked into the kitchen to thank him for such a great closing meal! You won't find your typical schintzel or sausage. Their menu changes everyday and uses fresh ingredients. Lovey and mom ordered the dinner menu which includes mushroom soup, salad with German potato salad, carrots , beets and then the main entree is pork wrapped in bacon placed in a skewer. This was followed by a big dessert with housemate gingerbread ice cream, with pineapple sorbet and cookie wafers with freshly made whip cream. I ordered roasted elk with potato croquettes served with walnut ice cream. My sister in law ordered trout and my brother in law ordered 3 pieces of meat, chicken, steak and pork on top of handmade spatzel. Everything was delicious as we all tried each other's dish. My nephew's chicken nuggets were made from scratch and not frozen that it tasted like schnitzel. I highly recommend this place. The owner/chef came out and thanked us for joining him for dinner. It was the best dish on the table! Ultra flavorful and perfect on top of the noodles. Also, the fries were perfect dipped in the meat's gravy. Service is slower for American standards, but that's nothing new for the more relaxed European vibe.

This restaurant is certainly worth the Michelin Star it currently has. The castle that Röttele's is part of is a little drive outside Baden-Baden but well worth the €30 taxi ride to get there. Either take a taxi or stay at the wonderful hotel castle because you definitely should enjoy an amazing wine pairing and 6 course chef's tasting menu and no one should be driving after that much spectacular wine. We did the full 6 course but you can do less.... But why choose when you can have all six!? If we had tried to do fewer courses we wouldn't have been able to choose which to leave out. No dish was left wanting. Everything from the Asian seafood sampler to the fresh lamb was more than we could have asked for. And the pairings didn't miss a beat. Starting with a local Riesling from the backyard of the castle! Germans do know how to make great white wine. For pairings they weren't afraid to give credit where credit is due either. To match the tender lamb we got to sample an ample serving of one of the best Bordeaux I've ever had the pleasure of tasting. The menu changes daily to match what's fresh and in season so I won't go into too much detail as I'm sure the menu has already shifted with the changing weather. The only negative I have at all is the atmosphere was a little lacking at 6 PM on a weekday as they only had the back winter garden open. But within a an hour or so the place was packed and happy conversation replaced the missing music. The main takeaway is that Röttele's is an amazing experience and you should make every effort to get out there and try it.
