I think the fact that I studied with him gave me an edge over equally-qualified candidates. Of course, I recognized that Kongsvik was a dynamic teacher during the training. His mastery was obvious the minute he began to address the class in Bambara, the indigenous language of Mali, thus putting us in our students' experiential shoes. I took his one-month intensive, and it was indeed intense. I worked hard, laughed a lot, slept little and learned so much. Not only did I learn how to teach English to speakers of other languages, I learned how to teach anything, and more importantly, I learned how to facilitate student-centered learning. The opportunity to immediately apply theory in an actual classroom situation is invaluable, but it's Kongsvik's extraordinary energy and sincere caring that transform this educational course into a memorable life experience. To use an idiom, the proof is in the pudding. With my certificate, I've landed paying jobs as a TESOL instructor.

The class size was just right, enough people to make it fun and social, but still small enough that everyone got involved. Chef Mica kicked things off by giving us an overview of the history of the area, its chile traditions, and the differences between the peppers we'd be working with and seeing around the city. That context added so much depth to the cooking, it wasn't just a class, it was a cultural experience. Each of us prepared a different type of relleno, and then at the end we all sat down and shared the full spread together buffet style. It was such a fun way to learn, connect, and taste a variety of chiles without spending hours cooking everything on your own. It was well organized, engaging, and easy to follow. My anxiety did kick in once I realized other people would also be eating what I made, but we made it through and I loved what I got, the jalapeno poppers. You can feel the passion in what the chef does and everything ran very smoothly even though we were the last done lol Come hungry and ready to learn! We walked away with some new skills, a deeper knowledge of peppers, and some great recipes we can't wait to try at home. This truly will be memorable for us!

Our class was on salsa sauces with different peppers and home made tacos. The class started with the chef walking us through the printed recipes and what was wrong with them. (Maybe redo these with correct recipes? And then go right to cooking and teaching?) Then we all chopped and cooked. At the end we got to taste everybody's products.

Moms, daughters and friends took over the studio for a bit and made some really pretty stained glass. Theresa also had some more pieces available for purchase that we took back for those that didn't make the trip.
