Not something you see everyday. The clientele looks like a cross representation of the local population with the well dressed mixing well with the not so much. There is a generous supply of complimentary tapas to go along with your drink but the light that shines the brightest here are the burgers. We started out with the idea of a simple hamburger but like most simple things our simple burger got out of hand pretty fast. We don't know how we did it but our burger ended up with: A hamburger patty Two layers of goat cheese Tomato Lettuce Onion Lomo Egg And a sesame seed bun All for 7 euros. And the best part was it was delicious. Cervecería Triskel is a blue collar eats place and we will be sure to wear our best blue collar when we return...which we will.

The friendly, young woman who works in the evenings knows, and loves to practice English. She knows our orders by heart now! The atmosphere is cool; contemporary art gives the restaurant a nice vibe. Location can't be beat. It's on a corner with ample windows to people watch. Check this place out and you won't regret it! It's our favorite pincho place in Santander.

The crema de esparagus was blend, boring, and all around disappointing. We had the ever-reliable Estrella Galicia which never disappoints. I asked for a sample of cider which was delivered post haste! We found it tart, acidic and super dry! It is made there and to be fair, may be too authentic for us. Go for the ambiance and have fun!

The place is clean and modern looking with a beautiful chalkboard and a friendly waiter who was happy to accommodate our late-night drunken and broken Spanish. We had delicious and piping hot croquettes with a creamy interior spiked with salty ham. Their anchovies were standard but really delicious. Finally, at the bartender's recommendation, we had some Morcilla (blood sausage) with a lovely creamy puree. There is so much amazing food in Bilbao, it's sometimes hard to choose where to go to get your fix. In this case, Ad Hoc's unusually extended hours made the decision for us and i'm really happy they did!!
