Located in the old town of Rende, that by itself is a must go for anyone visiting Cosenza. In "Rende paese" you are going to see the multitude of villages spread all around the Cosenza promontory. Beautiful view! Menu is wide, but keep in mind they strongly focus on beef and pork. Don't ask about fish here. Food is FANTASTIC! Ask the waiter for suggestions. The guy doesn't look so professional but it is a wrong impression. He knows what he is talking about and will definitely guide you through the uniqueness of their dishes, and on matching them with the right wine. Not so much to say rather than... A MUST GO!

The view of the cobblestone plaza and apartments with terraces was so beautiful and charming. The staff at Calabria Bella didn't speak very much English at all, which made us happy. The place seemed to be full of locals enjoying a relaxing, beautiful, summer evening. We ordered a bottle of wine at the waiters recommendation and ended up with something crisp and white, not sweet, which is exactly what we'd hoped for. There were so many options, but some of the things we tried were the roast chicken, the gnocchi and the veal. The one hiccup was that we thought we were ordering scallops and ended up with veal, but that was totally the fault of us and our translating app, so we made do and all tried it- it was amazing even though we're not even fans of veal! We were definitely tourists since we spent a shorter amount of time seated than any of the locals, but we thoroughly enjoyed ourselves and hope we didn't look too foolish to all the locals!

We bided our time in this quaint little restaurant and enjoyed some of the best, if not the best food of our trip so far. The door was closed, but the sign said always open so we poked our heads inside. We were warmly greeted by an older gentleman who said they were indeed open. We opted to sit outside, and what a great choice. The Castello was right over the lovely K's shoulder. Like most restaurants in Italy there is a cover charge usually from .50 to 3 euros per person. This place was 1.5 euros each. The toasted offering they brought out automatically was worth every penny of the 1.5 euros. The pasta Carbonara and the pasta Bolognese were both divine, and good sized portions. If you ever find yourself in Santa Severino, the Castello is so worth visiting and the restaurant is a must try!

The owner (we assume he was the owner) was showing us baskets of freshly picked truffles and porcini and another mushroom we didn't recognize. The three of us did the tasting menu - bonus as we didn't have to do the same tasting menus as some restaurants require you to do. For the tasting menu with fewer courses, they just brought my husband a plate incase we wanted to share with him. Every single course was fantastic. The atmosphere was fun. It is worth a side trip for. This is a very top-notch eating experience, with the simple, clean, elemental focus on super fresh and local ingredients that is so important in the Italian eating experience, but with the flair for presentation and unusual combinations you might see at fancy American restaurants (although, in my opinion, without any feeling of fussiness--this is still an Italian family establishment). The meal starts with a wine and meat and bread tasting sample in the restaurant's wine cellar, and concludes with a visit to the kitchens to wave to the staff and observe the pastry preparation area (or at least did in our case). The owner/head chef, Pietro Lecce, came out to shake our hands and introduced himself. The menu is terrific. The restaurant's surrounding area--the gorgeous national forest La Sila--is known for its porcini mushrooms as well as signature cheeses, both of which are featured prominently on the locally-sources menu. Things we ate which I would emphatically recommend: --a buckwheat mafalda (a new pasta to me) with local signature ingredients porcini and anise --porcini tortelli served with shave truffles --the porcini appetizer platter--it was great --"The Tradition": a semi-standard antipasto platter, but with local specialty cheeses and meats I hadn't eaten elsewhere We were so full we failed to order dessert, which I really regretted because the tables around me had some really nice-looking stuff. Poor planning. Go to Calabria! And eat here. Make a day or even two out of Camigliatello Silano--check out La Nave della Sila, the emigration museum, and Parco Old Calabria. Both the pizzas and panini include ingredients typical to the region of Calabria, such as the unique, mild and slightly sweet Cipolle di Tropea (Tropean Onions), 'Nduja (a Calabrian spreadable spicy pork sausage) di Spilinga ('Nduja from Spilinga, province of Vibo Valentia), Patate Mbacchiuse della Sila (potatoes from the Sila mountains) and ingredients even from the province of Cosenza, where the restaurant is located, such as Olive Schiacciate (crushed olives) and Salsiccia fresca Cosentina (Cosentian sausage).
