The Olbia was topped with fior di latte, shell-on mussels, zucchini, cherry tomatoes, and bottarga. This was the first time I've had whole mussels on a pizza, and the combination of seafood vegetables, tomato sauce, and cheese worked nicely together. The Mortazza was topped with mortadella, crushed pistachios, and burrata; and the Focaccia Estate (my favorite) was topped with burrata, arugula, fresh tuna, and cherry tomatoes. The latter two pies were "focacce" (pre-baked crust with no cheese and no tomato sauce) and had a delightfully thin, crispy base. Finally, perhaps the most creative dish we had was the Blue Spaghetti (colored with spirulina), mixed with algae butter and topped with tuna tartar and toasted almonds. This unusual dish was a bit heavy on the butter, but the blue pasta and creative toppings were definitely a memorable highlight!
