From hand slicing the locally sourced potatoes daily, to crafting each burger when it is ordered... using all fresh and local ingredients. We'd hoped for an appetizer of summer squash tempura, which was not available. Instead the chef made incredibly thin slices of fresh eggplant; dipped in a freshly-made batter and fried perfectly... then he drizzled it with a hint of balsamic reduction and some sesame seeds. Wow. A custom appetizer. So good! The burgers themselves were also works of art. I don't know that I've ever had as finely crafted a burger anywhere. The bacon (from a regional farm) was meaty and just the right amount of crispy. The cheese came from the delta, less than an hour away. Creamy and rich. ...and the beef... wow!
