I LOVE chocolate sorbet in general, as it tends to be rich and a touch bitter and not too sweet. The cacao sorbet here was more subtle and not as chocolatey-fabulous and others I've had, and I cook/bake with cacao so I know more or less what to expect. Unfortunately I made the mistake of requesting whipped cream on top. The cream was fine, but the ice cream artist applied twice as much Chantilly as there was sorbet, drowning it and throwing the flavor off balance. Oops. I just wanted a touch but was so surprised that I didn't stop her - plus I expected her to stop! I can't believe I'm complaining about too much whipped cream, but my expectations were higher. This Fromagerie is one of Saint-Remy's best kept secrets and a must see when visiting the area. Their products are all made in-house including fabulous ice cream, yogurts, milk, and of course cheese. They also have a great variety of local fresh products: eggs, spices, olive oil, and you can take some ice cream home. The prices are fair and the products are the best around. If you want to learn about dairy farms, cheese making, yogurt, etc. then bring the entire family and you will not be disappointed. Highly recommended.
