The food was delicious - a pike fish roll in cheesy sauce and the local tripe sausage, which was wonderful but not for the faint of heart. The somewhat reticent staff person who checked us in and was also our waiter cheered up a little when he realized that we knew what we were eating and appreciated a local butcher's chitterlings! But the truth is that we felt a little bit out of place here, as if we had interrupted the flow of life rather than being guests. This would be a four star review if it were only about the food, and travelers with good knowledge of French customs would probably do better and enjoy this place more.

My boyfriend and I tried everything except the cheese, and there was not a single disappointment. Everything was perfectly cooked and seasoned, and many of the dishes are not classic - I still remember a clementine cannoli with fennel granita, which is one of the best dessert I've ever had. Go there if you visit Chablis - this restaurant is truly impressive.
