We started with the Sopa de Guias, a creamy soup with chunks of squash, greens, and corn dumplings, served with grilled tasajo on the side. But the item to order to get a healthy sampling of their menu was the Comal Mayordomo, which came with some of everything: tasajo (grilled beef), cecina (marinated grilled pork), chorizo (spicy pork sausage), costilla frita (fried pork ribs), guacamole with chapulines, quesillo, queso fresco, blue corn quesadillas and memelitas, tamal oaxaqueño (masa filled with chicken in black mole), chile relleno (pepper stuffed with beef stew), and tacos dorados (rolled fried tortillas topped with mole). Everything was delicious in its own way, but the highlight was the freshly-made blue corn tortillas, which paired perfectly with all the different components. If I had to pick a few favorites, I especially liked the tamal with black mole, the chile relleno, and the guacamole paired with crunchy, salty grasshoppers!
