I bought my set of Heinkel Four Stars close to 40 years ago. They had been sharpened twice before. They were dull and pretty banged up. They would barely cut air. KNIVES OUT ! My beloved Wusthof knives deteriorated to the point I could barely cut butter. The electric sharpener I used had no effect on the edge. Mark told me he would be at the Mobil station on Cross Creek Blvd. on a Friday . We dropped the knives and a pair of scissors off and returned an hour later to pick them up. I have been looking for a qualified Knife Sharpener for quite a while. I bought a Master Chef Sharpener, and almost ruined my knives. I asked the local kitchen shops, and they offered to sharpen my knives for a fee, but they used the same sharpener that was not acceptable. Then I found Mark - I have a set of Wursthof kitchen knives and poultry scissors. I have never found someone who would do the scisssors. I also trusted him to sharpen my Gingher sewing scissors! All were done to perfection. He is the best person I have ever had sharpen my things. I will highly recommend his work to everyone I know. Mark is an extremely nice gentleman and great at what he does. We've now seen him twice at the monthly Hyde Park Fair; once to purchase a small general purpose knife and once to sharpen two of our nicer kitchen knives. As an amateur cook, I use my kitchen knives every single day. I've owned these knives for 20+ years and have had them sharpened in the past by other individuals and even at some high-end retailers (which was inconvenient and expensive). But, they were never really sharpened in the past, as I just learned after Mark sharpened our knives. I met Mark while attending a cooking class.
