It is crazy the amount of good butchers you encounter throughout Italy. Everywhere I've stayed in the last few weeks someone had a great butcher to recommend. The team at Podere Belvedere showcased how good the product from Danilo Mantovani who is 5 minutes from two of my favorite restaurants in Parma; Cocchi and San Martino. Two insanely delicious aged rib eyes cooked perfectly over wood and charcoal. Frissona beef is not something I will ever see at home so it was a pleasure to be able to indulge in suck well cared cuts.
