I was in charge of dining logistics for this unwieldy family trip and was grateful for this easy win, the first group dinner with our full complement. Arnaud Nicolas is a renowned chef, known for his charcuterie. His namesake restaurant is in the 7th arrondisement, a pleasant walk from the Eiffel Tower, where we spent the hours preceding our dinner in maximum tourist mode. We were a full half hour late for our 7:00 reservation, but I was able to call ahead and no one seemed to care. The place was more or less empty when we arrived anyway, and I was reminded that Parisians eat late by American parent standards. When we left, after 9:00, the dining room was busy and vibrant. The restaurant was lovely, unfussy but quite nice, with a laid-back wine bar atmosphere. We sat at a high table, set up for our enormous group, though one of us (the two-year-old) napped through most of dinner. Service was great, polite and efficient. Our waiter met all our needs handily, and we enjoyed a relaxing dinner (or as relaxing as possible, given our circumstances) with plenty of wine and cured meat. We started with a big charcuterie spread, getting two of the house combinations, La Signature and L'Italienne. La Signature came with foie gras, terrine, pork rillettes, and pâté en croûte, the pastry-enclosed pate that seems to have put Arnaud Nicolas on the map. L'Italienne was a more familiar medley of Parma ham, coppa, and soppressata piccante. Everything was outstanding. We also got a gravlax appetizer and a tomato and yellow peach salad to share, both winners. The salmon was silky and flavorful, marinated and cured, served with fennel and apple espuma and a dense, sturdy bread. The salad was fresh and colorful, with smoked burrata, tomato jelly, verbena, tiny croutons, and a drizzle of basil oil. I ordered the poached sea bream filet for my entrée and this was solid, a nice piece of fish served with cooked vegetables, bouillabaisse juice, and rouille sauce. I also tried some of my mom's octopus with red bell pepper coulis, green bean salad, and corn cream. This was the one miss of the evening, the octopus surprisingly tough. My husband's duckling filet, on the other hand, was fantastic, tender duckling with eggplant caviar, big chickpea fritters, and a blackcurrant sauce. The kids ate butter pasta, which was not on the menu but cheerfully provided. I was impressed with Arnaud Nicolas and would recommend it to anyone visiting (or living in) Paris. It works well in conjunction with the Eiffel Tower, but you can go whenever you want wine and charcuterie and an all-around good time.

After all this experience, Tribolet is my go to butcher. First and foremost, the quality of the meat is excellent. I live down the street and see the daily delivery of whole carcasses. My husband is constantly saying things like, Where'd you get the lamb chops? They're fantastic! and This bacon is so gooooood! Secondly, they have a broad, comprehensive selection. Whole carcasses means that I can get the cut of meat for which I'm searching. Beef brisket for making corned beef? No problem! Wild game in season - rabbit, pig, pheasants, ducks, quail, etc. Charcuterie - poitrine fumée (bacon to Americans), boudin noir, saucisson sec, merguez, jamon, etc. Third, the service is patient, courteous and personable. I don't speak much French and they don't speak any English beyond chicken (I suppose due to all of the tourists who buy the poulet roti?), but even if it's painful and takes 3x as long, they'll patiently ask questions and pantomine until they understand what it is I'd like and how I'd like it. I also get complimented profusely for every new French word I use (talk about incentive!) I also appreciate that I can come in and tell them that I have no idea what to cook and they'll make suggestions of what to cook (often low cost options) AND give tips on how they'd prepare it. In other words, recipes! I've even gotten recommendations on what sides to serve. It's like taking a mini French cooking class. They're also quite skilled, so your meat is trimmed properly (no little bone chunks and enough fat for braising meats to really get tender). The fact that I can get really specific about how and how much I want something prepped saves me time in the kitchen. Finally, while some cuts are on the expensive side, some items can be cheaper than the lesser quality version at Monoprix. They also have a EUR4.80 roasted chicken that is just the right size for two people (quite small) with enough left over to make soup. That's the cheapest price I've seen for poulet roti on Montorgueil. Of special note: They stock specialty items for holidays - for example, turkeys & chapon at Christmas.
