I learned of this woman-owned restaurant from of all people, the owner's father who drove us around Oaxaca in his Yellow Taxi. His daughter had worked at Michelin star restaurant--Claro in Brooklyn, NY., but, I understand returned to Oaxaca during the Pandemic and opened MasaPan.
MasaPan has a open covered dining room. The relaxed feeling allows one to leave everything at the entrance and come in to enjoy Oaxacan plates served to you as if you are family. We arrived early about 8:30am for breakfast. Bebidas, juice and coffee orders were taken promptly, and we were given time to review the menu. There were many offerings but the Enchiladas Suiza were amazing; say no more. Hot Cakes de Tejate is a modern interpretation using as a base, a pre-Hispanic traditional beverage made in Oaxaca that remains popular among indigenous Mixtec and Zapotec peoples.
