It's the perfect consistency and flavor- I could focus on this instead of drinking heavily to drown out my family's opinions about RFK Jr during our feast. Mother's Day Bratwurst cookout? Select your type- they have Philly cheesesteak, Big Grove Beer battered, Korean short rib, creole, and mango habanero. All of them slap like a disgraced debutante whose promenade partner got fresh behind the ice sculpture. Driving to the East Side of Iowa city and simply want a top shelf Cuban Sandwich? Well tough shit for you, they don't have it on the top shelf; it's made fresh in front of your face. (In terms of quality though I will put that in a tip shelf). Finally, the staff are helpful and knowledgeable. The usual stereotype I have of a butcher is a really beefy and gruff dude with chronic meat sweats, who pals around with a baker and candlestick maker (why is that a job btw, that seems like a hobby at best). These guys don't look like that- giving me a lesson in stereotypes and judging books via their cover. As I chomp down on my deliciously spiced sausages, I realize that both my horizons and waistline have expanded. Finally, it is pronounced Toe-Ma's. Get that wrong and they will laugh at you, and you will deserve it.

I watched the butcher a steer right in front of me. The cuts look great and I hear they also sell proprietary jerky too which is super savory. This place is a local secret. I've been dying to visit a real, non pretentious butcher shop and this fit the bill. FYI: You can buy 1 steak or dozens. I give it 4 stars because I went in at 9amish looking for my favorite cut (skirt steak) and they did not have any available. Next time I will call a week in advance to ensure they hold on to some skirt for me before I get back into town.

The strips looked beautiful, but have zero flavor. Just salty pork, it's like chewing a crunchy pork chop. The pork steaks have a good flavor (I attribute THAT to the farmer that raised the hog) but they were cut horribly with little to no trimming and alot of weird little bone pieces that have to be fished out . The breakfast links taste okay, but the casings are unpleasantly chewy. My ground pork looks like it's about 50% fat and the ham steaks taste very bland. So far every single thing I have tried has been really lacking in quality. These guys are nowhere near the quality of say, Edgewood locker, or Fairfax, or probably any other locker in the Eastern half of this state. Who would think any processor in IOWA would not be able to handle a pig. That's what we do here. They had zero remorse when confronted with the poor quality, just smugly stating that they have "lots of other customers ". So yeah, they have a pass poor attitude as well as skill.
