Four years on and we still enjoy doing it. This month was back to an old favorite, Fire Craft BBQ. Owner and head pit master, David Welch puts his heart and soul into the products his restaurant turns out. Not only that, there is a lot of variety and specialty dishes on the menu that most other BBQ places don't serve. We had 14 in our group and were able to pull together some tables and chairs in the large additional dining room they added not long after opening. The room is clean and well lit, big ceiling fans keep the air moving. Our group ordered a variety of things; I had the brisket hamburger with a side of the very southern yellow squash casserole. My wife had the chopped beef sandwich with fries and another friend had the chicken plate with beans and coleslaw. Others had their tocos and other sandwiches, one had the ribs. We were all full and happy when we finished. What 's nice is David came by to check on us and make sure everyone was happy, not many owners take that kind of personal attention.

If you're in central Houston or Austin,…read moreyou have dozens of options for fast, affordable street food that puts fast food chains to shame. But if you're in the suburbs, your choices are far more limited. Pioneering the food truck culture in the Woodlands is the Wicked Whisk food truck, a new truck from ninja chef Jay Stone. Jay's truck is a big, black Mercedes van, decked out with a state-of-the-art mobile kitchen, plasma screen menu, music, and exterior lighting. But as cool as the truck is, we're here for the food. Our attention was immediately drawn to the Texas Melt, a hefty burger featuring hand-formed Angus beef, applewood-smoked bacon, a schmeer of peanut butter, and housemade jalapeño jam, all on a fluffy cheddar roll. Biting into this substantial burger revealed a perfectly prepared medium-rare patty, rocking an aggressive char. It was juicy without being runny, and comported itself with a bold, beefy swagger. The crispy applewood-smoked bacon added a nice accent, and we were pleasantly surprised by the creamy peanut butter flavor, which melded beautifully. The mild jalapeño jam was a wonderful finishing note, with plenty of flavor but only a smidgen of heat. Even burger purists will enjoy this outstanding burger. On subsequent visits, we tried the outstanding bolillo - braised, pulled pork, friend plantains, smoky cheddar, and a peppery aoli on a fresh, toasted roll make for a very satisfying sandwich. We also sampled the fascinating pork belly sliders, dressed with a minted cucumber - a unique flavor that really made for a delicious slider. The only downside of the Wicked Whisk food truck is that currently (as of April 2012) they're only in the Woodlands on Thursdays at lunchtime, and their location on Robinson road is a bit out of the way. But we keep going back; they're worth the drive.

Chef Kane with Taste of the Sophisticated (TOTS) brought that vision to life with elegance and soul. From the moment she arrived, Chef Kane was completely locked in. You could see the passion in her eyes and the confidence in every step she took in our kitchen. She worked with a quiet intensity and grace, and watching her create was like watching an artist in her element. Every dish that came out was more than food -- it was a moment. The evening started with Truffle Macaroni Bites, perfectly crisp and paired with roasted tomato-garlic coulis and truffle aioli -- a rich and flavorful opener. The French Onion Soup, topped with golden gruyère and comté over toasted brioche croutons, was the best I've ever had -- bold, warming, and luxurious. Then came the Chicken Velouté, a velvety, refined dish with crème fraîche, fresh tarragon, and smoked sea salt. The Truffle Caesar Salad was a sophisticated take on a classic -- pancetta and parmesan crisps added the perfect punch. The main courses were stunning: Baked Salmon with citrus beurre blanc, roasted heirloom carrots, and fingerling potatoes -- light, bright, and beautifully balanced. Spinach-Stuffed Chicken in white wine garlic sauce with truffle mashed potatoes and wild mushrooms -- rich, earthy, and comforting. And the crown jewel: an 8 oz Filet Mignon, flawlessly cooked, served with creamy truffle butter, roasted Brussels sprouts, and silky mashed potatoes. Dessert was a celebration in itself: A Molten Lava Cake made with Valrhona dark chocolate and topped with 24K gold leaf -- decadent and unforgettable. And a delicate Madagascar Vanilla Bean Cupcake with strawberry coulis -- light, fragrant, and a perfect final note. What struck me most was not just the exceptional food -- it was how Chef Kane made every woman at that table feel seen and celebrated. Her presence, care, and artistry elevated the night far beyond any restaurant or typical catering experience.
