It's more than just a gin bar--it's an immersive experience, guided by a true artist of her craft. The woman who runs this place is nothing short of magical, a mind reader who curates each drink as if she's known your preferences for years. Her ability to craft the perfect gin-based drink, tailored precisely to your mood and taste, transcends the typical bar experience--it's personal, intuitive, and absolutely extraordinary. From the moment I walked in, the atmosphere was intimate and refined, with the perfect balance of sophistication and warmth. The bar itself is beautifully designed, with a top-notch selection of gins from around the world. But what truly sets it apart is the owner's sixth sense for knowing exactly what you need in the moment. She created one of the most exceptional, personal experiences of my life, and I don't say that lightly. Her right-hand person, the assistant, was equally impressive, ensuring that every detail of the experience was flawless. Together, they make an unbeatable team, delivering service that's not just attentive but intuitive. The cocktails themselves were masterpieces--complex, balanced, and unlike anything I've ever tasted. I've been to countless bars in my travels, but this one easily tops the list. It's the kind of place you should go out of your way to visit, even if Trento isn't already on your itinerary. If you love gin--or even if you don't--you'll leave this bar with a newfound appreciation for the craft. Quite literally, it was the best bar experience I've ever had, and it's a place I'll remember for the rest of my life. Rating: 5/5 - Exceptional.

The city's best wine bar. (I agree with professional reviewers)…read more It also happens to serve excellent, traditional Venetian classics. Its contemporary design, friendly staff, and outstanding value for the money add to the enjoyment of this 30 seat eatery. As with all good Italian eateries, the seafood, proteins, and produce are exceptionally fresh and sourced from the region. The produce has the telltale saltiness found in everything grown in Venezia. Tip: Order family style and share. Portions are huge. Straight to the food, the "traditional Venetian starter", their interpretation of cicchetti is exceptionally well done. The scampi in saor, sweet shrimp and onions in mild vinegar. Grilled octopus with cannellini bean foam, so tender, eaten together, the flavor mimics tuna. The baccala mantecato with polenta chips, pungent (ie smells like the canals) but tempered by strong peppery flavor of the rich EVOO. Massive umami finish. All good eats. A plate of razor clams done traditionally and finished with EVOO, perfect. Sweet, plump, tender, and juicy. The restaurant's signature "Veal Shank Cooked at Low Temperature", a sous vide veal shank served boneless in a sauce made from the cooking jus reduction and mounted with pumpkin cream, outstanding. It screams autumn when combined with the earthy cardoncelli mushrooms. Finally, an Italian "Pork Steak" with roasted seasonal veg from the Rialto market. Stunning. A double cut pork chop the size of a huge porterhouse steak in the US, cooked mid rare. Deep porky flavor sans the sweetness usually found in US breeds. Juicy but lacks fat marbling. Eat the absolutely delicious fat cap for richness. Outstanding paired with the roasted potatoes, mushrooms, leeks and yes, bok choy. Excellent wine book (iPad sized). Heavy emphasis on the Veneto and highlighting winemakers doing something special ie preserving the biodynamic methods of winemaking or preserving traditional grape varietals). Use the som. His recommendations are outstanding. As already mentioned, outstanding Italian service. High energy and fun. One month advance reservations required for both lunch and dinner. Fluent English. Seriously one of the best meals in the city bar none.

I did not have a reservation and although hesitant, they offered a seat at the shared table when they open in about 20 minutes. I walked around and came back although I thought it was a bit odd that I couldn't sit earlier and have a drink at the bar (likely just a difference between IT and US). Super cozy with a huge wine selection. I loved the unique magazine menu and opted for the tasting menu. The first course was Homemade Russian Salad with local steamed crab followed by Borlotti Beans Voloute with local mussels and baby scallops ragout and finally grilled local mullet steak with artichokes bottom and anchovies and garlic sauce for the main entree. Dessert was Hazelnut Semifreddo (GF) with whipped cream and red berries sauce. All of the food was delicious and perfectly prepared. The seafood was fresh and flavorful. I highly recommend the Hazelnut over the Tiramisu as it was superb and more reflective of the local cuisine. What was interesting to me is that the restaurant turned away several parties due to being fully booked but had seating at my shared table and a few seats at the bar. They were slightly pretentious and you could tell they were more interested in you if you were dressed a bit better, were interested in the wine, and weren't going to be obnoxious tourists. So if you choose to come here, play the part of a good patron. Would definitely come back for the food, but moreso, it's clearly got an amazing wine selection for those who are more interested there.
