One thing we don't get in the US is very young or raw milk cheeses as there is a pasteurization and aging requirement. It seems that Denmark was going through some similar,though more relaxed laws on this which are changing due to a persistent Frenchman. In talking to the owner we knew that he was a food lover in general based on some questoins he asked: Owner: " what would you like to try?" Us: "What do you love?" Owner: "I love everything here!" Us: "Let's narrow it down to what you consider special. We're looking for thing we wouldn't otherwise be able to get at home" Owner *pulling out tons of samples*: "Are you going to Noma?" Us: "Yes, we are looking forward to it" Owner: "You must be rich people." Us: "Uh not really but we do love food and it's high on the list here" Owner: "Well then you will love the live Fjord Shrimp dish with the brown butter. It is fantastic!" We laugh as we try all the delicious cheese he presents. We walk out with probably a half dozen different things in small quantities that we eat at the nearby square with our baked goods and butcher meats. It was a great eating day.

Yes, it smells when you walk in, but you quickly forget that when you look at all the great cheeses they carry. They also have a nice selection of different liver pates from a local butcher, olives, and interesting food items. But the best kept secret is that they actually make sandwiches! Yet, not only do they make them for ONLY 40 kr, they make them with pure love. Warming the bread while you handpick what kind of meat, cheese, and extras you want on your masterpiece, they then SLICE the meat right in front of you, carefully slice a heaping portion of your choice of cheese, and then the sandwich is topped off with the warm bread from their oven, and wrapped ever so nicely. I really can't say enough about this place. The sweet old couple makes me imagine them running this shop for so many years with to much passion...you can taste the difference. We sampled three cheeses and I absolutely fell in love with the slightly famous and popular Gammel Knas cheese, it was so delicious, especially when paired with the jam included on our plates. Apparently it's become so popular that they've had trouble keeping it in stock for a few years since it's used in quite a few different local sandwiches. The service was helpful and kind, and I really wanted to purchase the cheese during our visit, but were going to Tivoli gardens after then flying back to Sweden so didn't want to run into any issues with it. All in all, Arla Unika is a absolute must-eat while in Copenhagen, especially for those who love a smooth buttery cheese.

I wished the staff took a little more time to explain the difference between the two cheeses to me, or even showed me more varieties (1 star off). There were no other customers there. If returning, I would ask questions about more varieties and try to sample more. I later found out that Arla Unika supplied cheese for one of my favorite restaurants in Copenhagen, so clearly they are well-established and knowledgeable about Danish cheeses. I would want to pick their brains more.

I wanted to try some local cheeses and asked the staff for recommendations. The staff recommended two Nordsee cheeses (one aged 6 months, one aged 2 years) and one soft cheese. He let me sample them. I liked all three and bought a small piece of each. Vacuum seal is available to extend the shelf life, but I knew I was going to consume them pretty quickly.

Medisterapolese, merguez, bresolinni, were some of the meats we had to munch on outside in the square after hitting the cheese shop and bakery, a few doors down. The workers wear old school uniforms and hats to impart a time long past. Super helpful, I got into a discussion about the Medisterapolese with one butcher and I knew this place was going to be awesome. Is it weird that I can carry on a long convo with a butcher about the charcuterie arts? As predicted, fabulous meat products and it's also good to know my own butcher makes a very comparable product.
