That means that there's a velvety texture and a creaminess that you won't find in the tub at the bottom of your freezer. The Science: The liquid nitrogen rapidly creates miniscule ice crystals, quickly evaporating after coming into contact with the ice cream base. Liquid nitrogen boils at -196C, meaning that there won't be a trace of it left by the time you've given yourself brain freeze.
