I come to paglias whenever I'm in the area because it's SO GOOD. The restaurant is cute and it feels homey. Not to mention the service is great. The staff are always so kind. The food is good quality and is always SO tasty. Everything is always cooked to perfection. On any of their food items they always put plenty of cheese and it's heavenly. FOOD QUALITY: Bottom-of-the-barrel ingredients. Incompetent preparation. Sad. MENU FAVORITES: N/A. MENU FAILS: The tagline on the logo is "sandwiches and palonzas", suggesting that these are the items the restaurant is known for. I've tried both of them. And they were atrocious. Let's talk about it. First, their "homestyle" sandwiches... If this is the stuff your mama made for you when you were a kid, you need to call her up and get your money back. Dense, stale, white bread submarine rolls; and the world's cheapest lunch meat. With a crushed bag of Lays. Lame. I got the turkey club and a reuben for lunch one day - it was the most disappointing meal I've had since the time I tried to make a grilled cheese in the microwave, back when I was too young to use the stove. Second, the polonza, which is their version of a calzone. Maybe the quality varies depending on who makes it - some of the online photos I've seen look great, like the crust would be crispy - but the time I had it was a huge disappointment. I chose the supreme, which, according to the menu, comes with both pizza sauce and special sauce. The "special" sauce must be water, because mine was so runny, it was borderline inedible; each time I picked it up to take a bite, a rivulet of liquid would stream out of the corner. When it comes to pizza and calzones, the crust is the most important element. Here, the crust is totally bland and flavorless. The top was covered in a powdery layer of burned flour. The bottom, as well as the seam where the dough was pressed together, was stodgy and under-baked. As for the filling, the vegetables were raw, and there was so little meat it seemed like the baker forgot to include it. Tip: add some salt to your pizza dough, and try fermenting it for a few days. People have been baking bread for thousands of years; it isn't that hard. Watch a YouTube tutorial. Something. In the interest of full disclosure, I've never had the pizza here, and I suppose I never will, because the items I have tried did not inspire enough confidence to give it a chance. The world is depressing enough without bad pizza. FRONT OF HOUSE SERVICE: Here they do it quick-service style. You pick up your order at the counter. The dining area is a tad small, so maybe plan on take-out on Fridays and Saturdays. I haven't interacted much with the staff, and I won't go into details, but I recall a particularly rude experience with one of the cooks on that day I got the two sandwiches. KITCHEN SERVICE: The kitchen is open, so you can watch them make your food, if you want to. The kitchen is clean, I'll give them that. COMPETITION: For toasted sandwiches, you can't go wrong with Bellacino's. They offer a wide variety, they don't skimp on the ingredients, and the bread is pretty good. I have yet to have any pizza in Kirksville that I genuinely thought was worthwhile, so when I'm in the mood for it, I usually get Screaming Sicilian brand frozen pizza at the Hy-Vee and bless it with a few additional ingredients; at least it won't be a bland, soggy mess. ATMOSPHERE: Pagliai's is clearly a popular place in Kirksville, because I see the delivery guy driving around all the time, and I've never understood why... Aside from nostalgia (the restaurant has been open since the 60s), I think it must be the atmosphere. It's bright and cheerful, with music playing. The driver calls who seems a little confused saying do you live at a church no I live in an apt i tried to explain but the man hung up I then call him to explain how to get to my apt. One of the best thick crust pizzas in town"usually". You'll get amazing one day and not near as good the next, but if Alan is cooking, it'll be great. Tony makes a good pizza. They cycle employees so quickly it's hard to get anyone else reliably trained. Conditions aside, it's great pizza, the choice in cheese they use makes the difference. As long as the ingredients don't change, they'll be in business. I'm not a huge fan of the polanzas myself but many friends like them. The desert slices are unique, would recommend. We had family drop in for the day and needed a simple lunch for ten people. Several of us attended Truman State university and remembered Pagliai's fondly. I'm happy to report that they are as good as they were forty years ago. The sauce tastes more like tomatoes than salt. Meat and cheese toppings were good quality and the bread was delicious enough to eat by itself. The restaurant is small so we opted for takeout - food was still too hot to eat when we got it home. It was getting sorta late and the four of us from out of town needed dinner. Given that the world is just awakening from the pandemic, we were checking online info about restaurant hours first. It was not looking good, sidewalks had been rolled-up around 8:00. However, Pagliai's was open 'til midnight. Super! After navigating the nonsense around the detours we arrive, "Hey look! The hours on the door say the same thing!" And there was a fair crowd inside, confirming they were open and serving. Psych! We seated ourselves at one of the two empty booths, and the first words out of the server's mouth were "We stopped inside service at 9:30." It was 9:35. Most of the other patrons had not been served yet. "OK, we're done, I guess," somebody in our party mumbled, and we all rise to leave and head for the door. Take out was offered, and one of us said, "Soup?" The rest of us went back to the car to wait. And we waited. And waited. Ms. Soup returned after nearly 15 minutes with a small take-out bowl of soup and a tale of slow, surly and resentful attention, all while other *seated* customers were receiving their meals. After a clean decade of on and off again college attendance in Kirksville, I became very familiar with the local eating establishments. This is one of the ones I miss the most. They just don't make Ronzas anywhere else (though Trader Joe's sausage calzone came close ... before it disappeared forever). In the interest of full disclosure, know that I've only eaten their pizza a handful of times. In my opinion, that's not the reason to go to Pagliai's - it's the Ronza. That's right a capital R because it deserves it. There's a reason Truman alumni chapters sponsor Ronza nights where they have Ronzas shipped in frozen and cook them for the event. Yeah, that's right, you can have them shipped start dialing now ... I'll wait ... Actually I won't because ordering a Ronza shipped is something of a herculean task given that most employees seem to not be aware that their restaurant does this or that they should have some knowledge of the process. If you get the chance you should stop in and try one. My wife loves the 3-Cheese, but I've gotta go with the Supreme Ronza, hold the pepperoni. Oh, and make sure you eat the pickle and chips that come with - they make the meal. read more

Though my palate has changed over the years (no more fast food and microwave meals for me) my desire to have a Ronza has not. I had a meatball Ronza and it was delicious. The sauce was not salty and the meatballs did not taste like filler-food. The crust was very light. The staff was real friendly too. For the most part, this pizza is fresh and the crust is crispy. I can't say this is New York Style Pizza, however, the slices are too small and the crust is too crispy...trust me, NYC pizza is far far superior. The prices are cheap, but so is everything in Kirksville, so that's hardly any real benefit. I really wanted to like this place. I was hoping to have a fun pizza place to go while attending Truman State University. Unfortunately this place did not live up to any of my hopes. The food is pretty mediocre overall, lacking any seasoning or interesting flavor. However I could live with the bland food if this establishment was not so incredibly disgusting. I had a friend who worked there and had nothing but horror stories to tell about rats running around on the counters and floor and other levels of extreme uncleanliness. I also had another friend who liked Pagliai's until she got food poisoning from one of their ronzas. This is probably a decent place by Kirksville standards, but I was completely unimpressed with them. I also have to echo Joyce's comments about their unsafe drivers who have nearly hit me both while driving and biking. read more

Nice casual ambience. You can order in, order out, and order delivery. Great place for pizza, sandwiches and palonzas! Palonzas are stuffed pizzas, basically. They say, "It's a sandwich, but it's not!" If you like pizza crust in every bite then palonzas are your answer. If you're not feeling too hungry, you can even order by the slice. Pizzas and palonzas aren't the only things that are great here, you've got to try the cheesy garlic bread. Be sure to order the 4 piece because you'll wish you did if you order anything smaller. Lol.
