When preparing them, most people break off the bottoms at their weakest point but I prefer them cut exactly at the halfway point because anything below that is too hard and tough, IMO. Aside from the boring steamed variety, I like to stir fry them (especially with fresh baby bellas) with fresh garlic, garlic salt, pepper and oyster sauce.
