    Incredible experience here. Only in Paris for a few days, my friends and I knew a wine and cheese tasting was on our to-do list. The workers at Paroles de Fromagers set us up with an affordable reservation they happen to have available the day of, and upon arrival, they gave us a tour around the shop (it's small, but there's lots to look at!), pointing out different cheeses and how they're made. The storage room has enormous wheels of cheese bigger than I could carry if I tried, and while he explained the cheese-making process, our host also described what cheeses and wine pairings he preferred as well as different breathing techniques to properly taste each cheese and its unique bacterial flavorings. At the end of the tour and explanation, we were led downstairs into a private cellar to enjoy our personal wine and cheese boards, complete with the proper pairings. Each cheese was an experience of its own to taste, and each sample was unique in its flavoring and texture, as were the characteristics of the wine. Always a Manchego girl, the firmest cheese was my favorite, but I branched out and found I loved the bleu and soft sheep cheeses as well!

    I'm leaving this review way way late. We did a wine and cheese pairing class in January of 2017... but better late than never, right? This was a highlight from our trip to Paris. The little cheese shop was adorable and we had our class in the cellar. The guide was so passionate and informative! All of the pairings were, of course, delicious. Really fun experience to have while in Paris!

    We had a great time tasting cheese and sipping wine. We went for the Amateur experience and it was well worth it.

    I attended Le Cordon Bleu (Grand Diplôme program) for 9 months with the hope of learning the…read morefundamentals of cooking, as I had no prior experience. Unfortunately, LCB does not cater to beginners, despite their claims that no experience is required. That simply isn't true!! Classes moved at a relentless pace, leaving little room for actual instruction! Instead of focusing on techniques, we were always rushed and then told what we did wrong. This led to injuries, mistakes, and a lot of unnecessary frustration. If you're new to cooking, this environment is more overwhelming than educational. It became clear that LCB is designed for those who want to work in high-pressure restaurant kitchens. But in my class of 16, only four students had that goal (and most classes had this same ratio). The rest of us were there to learn for personal enrichment, to open a restaurant/ café one day, or to explore culinary arts more deeply. Unfortunately, the program doesn't seem to acknowledge or support those paths. My disappointment isn't with the instructors--(shout out to Chef Caals, Chef Yann, and Chef Hoel), who were excellent given the constraints they were under. The issue lies in the LCB system itself! The program feels more like a factory line (taking your money) than a school, pushing students through their machine, rather than investing in their growth! For the cost and prestige, I expected much more. Le Cordon Bleu needs to rethink how it supports students who are genuinely there to learn, not just to survive the next service rush.

Paris definitely does not have a craft beer culture. This is a real shame because there are many wonderful beers produced in France. But you would be hard pressed to find 95% of them in bars in Paris, even bars known for having good beer. One of your only options is going to Cave a Bulles and buying individual bottles of French beer. If Simon is not busy, you can easily chat with him for an hour about beer. He will help you choose a good variety of beers to bring home, ones that you are probably not going to find in the US. His English is excellent. And If you really want to make a friend, bring him a rare beer from the US (or elsewhere).

I showed up 15-20 minutes before closing, and I wish I had gone in sooner. Simon loves what he does and it's evident. My 2 biggest regrets were not bringing him a bottle from back home and not having a checked bag to bring the loads of Cantillon (that I wish I had bought) back to where I was staying in Nice. La Cave a Bulles will certainly be a staple for me whenever I visit Paris.
