Paru has "sushi" but that is not what it is all about.
This is a major haute cuisine innovative Peruvian restaurant.
You will get dishes here that you can't get in the United States or in Buenos Aires, or for that matter probably, Peru.
The dishes are innovative, complex, multi-layered and multi-ingrediented.
Having access to the many forms of Peruvian corn gives Paru natural advantages over Peruvian restaurants in the United States that can't get this critical input.
Having access to the utterly superior seafood that Argentina has doesn't hurt either.
And yet, there is no doubt in my mind, there is a just a whole lot of originality here.
Of a menu with about seventy items, about thirty were standard Japanese or Peruvian staples.
There were forty items I had absolutely never seen before,
Each one had a super long list of ingredients.
It took me a minute per dish to understand exactly what the cook was trying to do.
Even then - there were tastes and concepts that defied any attempt to categorize them with the foods in my mental vocabulary.
