Here is perhaps a strange review: I got my knives sharpened a few weeks ago by Pete and they have been a joy to chop and slice with - truly didn't realize how dull they were. This all became even more clear to me last night, while making dinner. I did something very inadvisable and, in doing so, cut my finger with my very big and sharp knife. Middle finger, at the knuckle. When I finally recovered from the shock enough to assess the damage, I was fascinated and thrilled to see that while the cut was a little deep, it was perhaps the cleanest cut I've ever had in my life. Almost disconcertingly so to be honest. and the cut itself doesn't hurt or sting at all! There wasn't even any blood on the blade, but I washed it off and continued using it to make dinner. I spent the last year and a half trying to remember to bring my knife to the farmers market to have it fixed by Pete. It was corroded and the tip had been broken off....so it was F-ed. He was able to fix my knife to look and feel like knew and did the paper test right in front of me. I went home and used it immediately (chopping almonds and strawberries...I know, weird combo to test a knife on haha) and it was like magic! Better than new! Highly recommend. What can I say that hasn't already been said here? Pete is the best kind of person to get help from -- professional, efficient, transparent about his process, affordable, and (best of all) a delightful conversationist. My story begins on Christmas Eve. We're hosting a dinner party with our closest family friends, and a delicious-looking roast sits on the table. I stand over it, carving knife in hand, smile on my face. Talking and laughter surrounds me as I lean in, place knife to meat, and begin to carve. I slice back and forth and inspect my work. The meat appears untouched. My brow furrows. Did I just imagine I was cutting? Was I hallucinating? Am I having a transient ischemic stroke? Did I accidentally use a spoon? I try again, exerting more pressure onto the meat. Again, not a scratch on it. I try cutting it again, SAWING at it like some kind of maniac, leaning my entire weight on it, WILLING it to just let me CUT YOU, damn you! -- still nothing. Sweat beads my forehead. I notice the room is silent, but I'm afraid to look up. In the silence I hear a guest's belly rumble hungrily and, somewhere distant, a ghost cow's laughter echoing in the winter wind. I curse under my breath and have another go at it, this time summoning the strength of ancient ancestors, primitive hunters from the thickets of distant Mesopotamia, the cradle of civilization and, I'm pretty sure, the original inventors of carving knives. After what feels like a month of sawing at the meat, my should is burning and my carving hand is cramping, but a chunk of meat has been parted from the roast and lies on a plate in a pool of blood. It looks like some ravenous beast has tore it off using molars alone, but the deed is frickin' done. Three hours later, everyone has a variously-sized hunk of room-temperature meat in front of them and I've made an oath to myself to never ever let my cutlery make a fool of me again. Fast-forward ten months and I remember the oath. I must act fast -- winter is coming and with it another Christmas roast. When I hand the blade over to Pete and recount this story, his eyes shine with empathy. Here's a man who knows the gravity a knife can hold in a man's life -- a blade can bend his destiny around its edge. He inspects the knife and explains details about its make. The spacing of the serrations, the bevel, the angle of the edge, and the reasons for its dullness. He reads it like a fortune teller perusing a palm. I suddenly feel a surge of forgiveness for the knife. It knew not what sins it wrought upon me -- 'twere but a child, made imperfectly by an imperfect maker. Fortunately, Pete knew how to correct the problem of its dullness: by sharpening it. And sharpen it, he did. I had my knife back the next day and the price was right. Pete: thank you, my man. I tried to sharpen my roommate's knife as a surprise, using a whet stone. While my intention may have been in the right place, my skill set was not. I wound up creating a valley on the blade's edge. I found him @ Culver City. He sharpened a 10" chef's and 6" cleaver; $18. We spoke about the process in length because he enjoys what he does, He's a knife nerd. I said I was going to get them "professionally" sharpened instead of the guy with a grinder at the market route I had been taking, but glad I gave him a shot. The knives are sharp now. Took him a couple more, 2 weeks later and got some more advice and info, he's full of it! He said to bring them back in a month for a polish, so that was nice to have some follow up service included. Long story short, I had been trying to find a sharpening service willing to sharpen the teeth on a vintage tape dispenser for many months. I've never gotten my kitchen knives sharpened before. I used to think it was quite a superfluous thing, I mean, as long as they can cut, that's fine, right?? Which, true, but if you spend more than even a cursory amount of time in the kitchen, you know what a pain in the ass it can be when it takes you twice as long as it should to chop your vegetables, or when you can't slice your tomatoes thin enough, or when you accidentally (and hypothetically) cut the tip of your finger off because your dull knife slipped. So, in the spirit of efficient, streamlined living, I decided to give knife sharpening a go. I'd seen Pete's stand at the Silver Lake farmers' market months ago, even got his card. I went by a few weeks ago, but he wasn't there, and with a little Internet research, realized he now made weekly stops at the Atwater Village market. This morning, I bundled up my knives in kitchen towels, packed them in a bag and made the trek over the Hyperion Blvd. bridge (a good excuse for some exercise, too). I dropped them off at Pete's and was told that he'd send a text when they were ready--how ingenious. I went and bought some apples and bread, met some friends for brunch at Canelé, then retrieved my newly-sharp knives (payments can be made in cash or with a card). My roommate and I tried them out, and they cut effortlessly through lemons and greens, with hardly any pressure. I am legitimately excited to cook again! Pete and his wife run a solid knife sharpening operation. I frequently use his services at his very unique knife sharpening trailer at the Atwater Village Farmer's Market every Sunday morning. I recently asked if he or someone he knew could replace a knife handle, which is a family heirloom that's in heavy rotation in our kitchen. The vendor, they referred me to, was good and cheap. However with the best blade plans, there was a significant delay getting the knife back (months rather than weeks). Yikes!!! I may never see our heirloom again! Long story short, when I mentioned this to Pete, he was able to resolve the situation immediately and the knife was returned with the handle repaired. Pete even took the time to buff out the new handle and sharpen the blade on the house. I'm happy to report the knife is back in my hands and better than new. He caught my eye because not only have I been meaning to bring my knives in for a good sharpening for a LOOONG time, but there was quite a line and buzz around his super-awesome tent, so it seems he already had some loyal and enthusiastic customers. The first week, I just brought in a few of my mid-grade knives. He was quick, the price was great, and the knives are unbelievable!! The second week I brought in my really expensive German and Japanese knives and was really impressed with the care that he took.
