Our Japanese cleaver had a nick and was previously sharpened somewhere else, but still felt off. [[HIGHLIGHT]]Been following Steven on IG and noticed that he's very knowledgeable when it comes to the details of knives, especially Japanese knives.[[ENDHIGHLIGHT]] Decided to stop by his booth while he was in San Gabriel in front of Howie's market. The amount of copium this dude exhibits in each of his replies to negative reviews is palpable. He called me a bunch of times on instagram to 'hear me out' but instead cut me off to yell at me 'his understanding' of the situation. I hung up. I later scheduled a call back with him, he missed my call and now he attempts to control the narrative to protect his fragile ego. He fucked up my chef's deba and I made it right by replacing it, something Steven here should've known to do himself. He's a poor sharpener, based on his lack of progress in the craft since I first used him years ago to grind down some bolsters. He sharpened a single beveled knife at 90 degrees and left a plateau where an edge should be. The fact that a professional sharpener would hand that back as being 'complete' and taking money for the work is.... Embarrassing. I left all the editorials out until I read his response. The facts are this: he destroyed a deba that belonged to a chef client of mine. When I asked him to correct the work, he refused. I ended up covering the cost of replacing the knife. $250. My grinder is in storage so I had Steven do grind work that I would then finish and polish by hand. He gave me... not what you'd call a working knife back and charged me for the pleasure. He never made it right. read more

Steven did a great job with my knives! I'm comfortable maintaining mine, but still like to defer to a pro once a year. I also find my local pop-up site to be very convenient/accessible (that is, parking at a grocery store is a lot easier than a farmers market, in my view). I agree with one of Steven's social posts: The paper cutting test is fun but has limitations (thin tomato slices are a great measure); I'm glad to see on his other posts that he has a tool to objectively measure sharpness. As a chef who has worked private events to commercial kitchens, my knives are used to their full extent. I've had chips and dents from who knows what. I have gotten my knives sharpened at countless places from DTLA to specialty shops but, this place takes the cake. Many places have turned down kitchen scissors, meat cleavers and serrated knives but Steven did it all. He even helped me fix some chips and dents on a knife I was contemplating on letting go! The price was reasonable and he was quick with sharpening my 8 knives within less than an hour ( looked like he had quite a lot of knives to sharpen after I dropped mine off so time varies). Overall, I'd highly recommend his service. I had a mix of workhorse knives like 8" Mercers to 6-8" Würsthofs. All were sharpened well and none chipped. I'll surely be a returning customer. read more

I gave Steven a full set of Tsunami Japanese VG10 Damascus knives only to have them returned in a less than ideal condition. By less than ideal I mean nearly ruined. Was charged $110 for the work and when I inquired about some additional fixups I was snubbed to say the least. F*** this clown. read more

Excellent service with a fast turnaround time when visiting in person! I do not have any experience with the mail-in service, but I've been using this service for a few months as I don't have the time to sharpen my knives by hand. He also provides excellent service for damaged knives. I texted Steven on a Thursday with a special request to drop off in Burbank and pick up next day at his sierra Madre location. Immediately within 5 minutes I got a response saying it was no problem at all. Fast forward to the drop off - I was pleasantly surprised when Steven said he'd be able to get it done in 5-10 minutes if I could stick around. Normally a lot of places require several days lead time, so I was definitely taken aback by this (his website says typical times are 1-2 hours). Knives came out super sharp - won't hesitate to use his services again soon! read more

Word spread about my sharpening service and neighbors began asking if I could sharpen their knives as well. I started by driving to homes to pick up the knives, sharpen them from my garage, and drop them back off in the afternoon. I then partnered with grocery stores and butcher shops in Glendale, Burbank, San Gabriel Valley, and Brentwood to make this service more accessible.

Meet the Business Owner: Steven C.

Getting my knives sharpened was a chore. Other sharpening services left me dissatisfied with the poor communication, inconsistent pricing, or over-polished edge that couldn’t cut into tomatoes. I began learning the skill through a local mentor, YouTube, and online knife sharpening communities. I started with Japanese whetstones to master the fundamentals of maintaining a consistent angle and minimizing the amount of steel removed. I upgraded to belt machines that have been customized for knife sharpening for a more refined and repeatable process. Word spread and neighbors began asking if I could sharpen their knives as well.

Charlie's Sewer and Drain set up an appointment and sent out their plumbing tech Cesar to have a look. Cesar was on time, friendly, and knowledgable. He popped open the trap and also tried to clear the clog in the drain with his more industrial-strength snake. Unfortunately, we were unsuccessful -- the pipes are so old and corroded that we suspect it will take a much bigger repair. He wrapped up and cleaned up, and after we discussed possible next steps, he got us an estimate for further work within the hour. He didn't charge us since we weren't able to get the clog cleared, which I really appreciate. At time of writing, we're doing due diligence to collect other estimates, but my engagement with Cesar and Charlie's S&D was really favorable, and deserved a great review.

When I asked him to do additional work to prevent future issues, he could have run up the bill, but instead he told me straight: "No, you don't need anything else."
