It's like a barbecue gumbo (but better than that sounds). It's so meaty, and yet the broth itself is this rich liquid which is like the essence of barbecue itself. It came with the best cornbread I've had outside of the United States (although I come from the UK which basically takes the opportunity to mess up cornbread every time I've had it). The pulled pork croquettes were also stand outs, as was just the overall service. Super friendly, and just chatting but in an unobtrusive way. Even though we were completely stuffed, we ordered the banana pudding. This was a very good choice, but I have to say that it's only the second best I've ever had. The first is Magnolia Bakery in New York, so frankly it's still quite the compliment!! Just so good. If I was in Stockholm longer, I'd be tempted to come back.

Regardless of what you order, a complementary basket of breads and butter is served. The food took around 20-25 minutes from order-to-table. Judging from the food freshness, quality, taste to the attentive service and cool ambiance, Paul's has really made a strong first impression. Portions were sufficient but certainly small by American standards. Not sure that's the appropriate frame of reference but it is smaller. Highlights/ Lowlights - let's start with the key differentiator of good BBQ, brisket. The brisket had good bark and was smokey but no smoke ring makes me think it was liquid smoke. It was cooked well but a cardinal sin was committed. The brisket was cut in the wrong direction making it stringy. - variety of sides and veggies were nice. Pickled items were good. Potato salad was unevenly cooked. - cornbread tasted good but fell apart in the hand -BBQ sauce and chipotle sauce were nice. BBQ didn't quite fall into Texas or KC style. It was thick but had a sweet and sour taste. Not bad but not Texas. - ribs were rough. Short little ribs that were over cooked. They weren't baby back. Just the small end of spare ribs. Or maybe they were cut. - fried chicken was good. It was thigh meat cut away from the bone. Tasted good but if you're looking for a traditional fried chicken, you'll be disappointed. - sausage was actually the highlight of the whole meal. It had a crispy skin and good flavor. Was almost like a Chinese sausage. All in all a good experience. Not the best BBQ in the world but certainly good for being in a Nordic country. The restaurant is very quaint and had a very pub-ish vibe, especially with the bar in the center of the first floor with multiple beers on tap. On my first dining experience here, I was with a group of 6, and we were seated right away. The menu was in both Swedish and English and offered mainly an American fare with a few Swedish touches. Most members of my party ordered the Köttbullar (Swedish meatballs) because we couldn't stay in Sweden without trying some authentic Swedish meatballs. The meatballs were great and tasted familiar - like the meatballs at IKEA, which isn't a bad thing at all. The gräddss sauce was nice and creamy and complimented the lingonberry sauce. Pressed potatoes came as a side with the meatballs and completed the meal wonderfully. We enjoyed our meal and came back the next night, this time with a party of 14. The restaurant was very accommodating and we were seated in the bottom floor, in a nice cozy room with an arched ceiling that provided wonderful acoustics. I couldn't get myself to order anything else but the meatballs so I went ahead and ordered myself another one. I also want to comment on the people that work in this establishment. They were cheerful and enjoyed our company and even shared a couple of stories with us. A few of us decided to stay for some dessert and coffee. I ordered the chokladmandeltrta med vispgrädde (chocolate almond cake) and devoured all of it. It was very dense and chocolately, but was balanced with the whipped cream. It was a perfect afternoon to be out. Eisa took great care of me and we chatted a bit on the history of Hard Rock here in Stockholm. It used to be further into the local area, very homey and a classic style to the old place too. But the new location has its charms too! Really great to get out and around Stockholm to see some old and some new laces and things too. I love cities that are always evolving and Stockholm certainly does that very well!
