You choose what you want and pay at the counter. I am unsure if you have the choice to get your sandwich freshly made or not. Using a premade sandwich operating model seems to indicate that there is no option to customize the sandwich. I grabbed an Italian deli sandwich and took it back to the hotel to eat. I would have liked the option to have the sandwich toasted, as it seemed like a sandwich that was put in the fridge. The bread hardens a little. I did love the basil mayo in the sandwich, which had a very unique and fresh flavor.
