Growing up, my parents would always buy bread from the neighborhood bakery. We would enjoy freshly baked pandesal in the mornings and have either kababayan, pan de coco, or pandesal for our afternoon merienda. We have moved away from that neighborhood several lightyears ago and our lives have unfolded as they are today. Why am I suddenly a poetic?? Anyway, we have to find another panaderia (bakery) to satisfy our daily bread cravings. There was one a few blocks away from our house but they moved to another part of the city. It's too bad because it's our everyday source of malunggay pandesal. But, my parents, being ever resourceful, have recently discovered a bakery that's a tricycle-ride away from where we live. It is where we get our bagful of pan de coco. Their pan de coco tastes sooo good that I would always ask my Mom to buy us some whenever she does her errands within the vicinity of that panaderia. Each soft bun is filled with sweet dessicated coconut that makes it an authentic pan de coco. I have bought pan de coco from other sources before but they taste nothing like the ones that my parents would also buy.
If you live or work anywhere near the Alabang Medical Center, this panaderia that I'm telling you about, is very accessible from the National Road. Go and buy some of their flavorful pan de coco. read more
