This place seems like more hype than quality, but I fell for the marketing and waited in a long line to get inside to see what was on offer. I went towards the end of the evening near closing time, so the cookies and pastries had already been picked over quite a bit. Luckily, I was here to get a gingerbread man, and I picked out the cutest one ever (see photos)! I've rarely met a gingerbread I didn't like, and this version was a-okay. It wasn't as spicy as I'd like, but it had a nice chewy crunch to the cookie that made the texture quite satisfying. Of course, as is my method, I nibbled off his arms and legs first. I'm not such a fan of the icing, and Gilg's version I found quite bland. It was sweet, but not tasty. My cookie was individually wrapped in plastic which made it easy to reseal to enjoy later. I was able to take a few more nibbles on my train to Paris the next afternoon. And did I mention how stinking cute the cookie was? The little wide eyes and "o" face...just adorable. I could see these making excellent gifts to take home from Europe, if you could keep the cookies from breaking during transit. The other goods on offer looked tasty, but if the gingerbread man is any indication, this may be one of those "all looks, bland taste" type of bakeries. We tried multiple bakeries in colmar. This was our favorite. Their pastries were consistently fresh. The croissant was perfect. Light flaky on the outside, soft and chewy on the inside. The apple pastry was so good. They workers were super nice and helpful. The sandwiches were just ok. read more

Situated in the historical center of Colmar, Gilg is a tiny pastry shop with no seats, it's a take out store that makes decadent luxury cakes that are not just aesthetically pleasing but also phenomenally delicious!!! The savarin I had was one of the best I've ever had, just as good as the one I had at Fauchon in Paris! Oh la la, my mouth was partying for real!!! I did not get a chance to try the delicious looking cakes and pastries at Gilg!!! I arrived on a Sunday morning behind a huge tour group who were clearing the shelves! If I did not have a train to catch to visit some castle in a nearby town I could have waited. I assumed that there would be an opportunity to sample the cakes the next day but forgot to check the opening hours for Monday :( So this rating is based on the presentation of the cakes compared to other patisseries rather than the taste! read more

When in Alsace you have to stop by Pâtisserie Gilg. The pâtisserie is family-owned and has been located in Munster since 1936, they have in the last 8 years expanded with 2 additional stores, their 2. in Colmar (2008) and 3. in Ribeauville (2010). Once my firend found out about them, we pretty much had to visit a couple of times during our vacation. Not only do they have the most amazing cakes, made for one really cake hungry person or easily shared between two. As we loved the cakes we would buy 2 the share everytime. A repeat preference was the Tarte au Citron, for me it cannot get more french that this cake/pie. In addition to their cakes, they also make a bunch of macarons in different flavours, and a wide selection of chocolate. I especially liked the intense vanilla and caramel au beurre salé macaroons - soo good. The best part is that their products are top quality, but all in all not that expensive. The result, for us at least, was we kept coming back. You try them, and see if you can stay away afterwards. read more

Best macarons hands down and the place really knows how to make a mousse! Their desserts are adorable and my boyfriend and I spent $50 there on a variety of desserts, croissants, and chocolates. I would highly recommend their desserts (from cakes to macarons) and their chocolates are pretty decent. Don't forget to give them a shot! Two reasons it didn't get 5 stars: the croissants were more like brioche croissants and didn't have the layers I was looking for although the taste was still good; the cherries in their chocolate cake had way too much alcohol in it. I've had alcohol soaked maraschino cherries before but this was so much alcohol my boyfriend and I had to pick them out. The rest of the dessert was still tasty though! The people who complain about the price have no idea what goes on into making these beautiful desserts from the time spent, to the ingredient costs, to having to account for waste. I thought the prices were very fair and I would absolutely go back and purchase more desserts if I go back to Colmar! read more

The best bakery you can find in the city. The cube is one of my favorite pastry here. Never disappointed ! Prices are not so expensive regarding the quality of each product here. It is now my mandatory stop for my next visit in Colmar. There is no seating, all products are for take-out only. Our host said "best croissants in France"and they were- this is my fourth trip to this country and these truly were the best pastries. My husband and I went in for croissants and came out also with a vanilla eclair, 2 pain au chocolate, a citron twist, a Kugelhopf, and 1 brioche au raisins. All these pastries were only 10 euros! All were superb but I recommend the croissants, pain au chocolate, and the citron twist. I've had better brioches elsewhere but the rest were top notch. I wish we got more, but they don't taste as good saved the next day and we were catching a train. Oh the woes of patisserie life! read more

It was a gorgeous display of sweet delights, so I bought an assortment of macaroons. I was excited because of the unique flavors: olive oil and vanilla, strawberry jasmine, violet and raspberry, and cassis. To my great disappointment though, it was a bomb. A few shells were too soft and cracked when I picked them up (my hands aren't big and clumsy) and some of them left behind oily residue after sitting for just a day even though I was told they could keep for up to a week. read more

Best croissants in France is what our AirBnB host said when we arrived and she was not kidding. Our only regret is not buying more pastries. If you go to Colmar, you must go here. Just remember. They are closed on Monday and open at 9am on other days. So get there early if you want a chance at getting some before they sell out. read more

Words cannot describe how tasty the pastries are! The employees are also absolutely wonderful! regulars were coming in & they were all greeted. We too were treated so well! Not speaking French can sometimes be difficult however, this encounter was one to be remembered for it's exemplary service & refined food. We will return to Gilg each day while we are here in Colmar! read more
