Sävargården is one of those buildings rich in both history and culture. It was originally built in the parish Sävar outside of Umeå already in 1806 as a mansion for the foreman overseeing lumber production in the parish, and it has even served as the headquarters for the Swedish army in 1809 when Sweden lost Finland to Russia. During the 1920's the mansion was moved from Sävar to Gammlia where it currently is still standing, and with an ambition to be influenced by local traditions and the genuine spirit typical for the county and its surroundings. They favor local cooking traditions with nearby production of both meat, fish and other produce, changing the menu according to the season and what is locally available. As with all things, words are still only words, and the task at hand is of course to find out if they live up to their goal and ambition.
I've experienced this place on many occasions; from lunches to Christmas table servings to several course meals in intimate settings. They have never disappointed, although they have never made my palate sing A Capella love serenades either. In truth, it's mostly smooth sailing without those moments of sheer excitement nor is it never boring. The food is usually well prepared accompanied by good wine selections, but I just miss a bit of "oomph".
