With my husbands career, we move around about every 2-3 years, so we've lived down South where smoked meats and barbecue is the flavors to beat. And because I grew up in the Midwest, I will be honest, I was not expecting much. We were met with smiles, even though we showed up less than an hour before they closed. Our first bites were greeted with smokiness, sweet and juicy flavors of a tender cut that we have not had in quite some time. The meals were served on trays, lined neatly with parchment paper.
