I came here first a few summers ago and was really impressed with the concept. I really enjoy the cocktail selection and the different rooms and levels in the bar. It's better to get there a bit early so you don't have to wait to come in. Also, it can vary often depending on who is in the bar that night can set the mood. The menu changes seasonally and all of the drinks have experimental flavor pairings that create a symphony in your mouth. We sat at the bar and enjoyed watching our knowledgeable bar tender craft our drinks. My favorites from the spring menu are the Nettles to Say, and the one with local apple brandy. Ruby feels like a find when you actually find it. Walking down Kompagnistræde you turn down a dark street toward the canal on Knabrostræde. It brightens a little on Gammel Strand but looks mostly residential. You come to a typical building with a lantern on the stairs. My first time I thought there must be a mistake and we were walking into someones house. Once inside, it's like an old Prohibition-era speakeasy. The atmosphere is fabulous and the place is full of little rooms and nooks to sit or explore. Downstairs one room is actually an old vault. I've been there when it was quiet and reserved and I've been there when it was booming. One of the owners, the guy with tattoos on his forearms and the thick glasses, is super nice. I mentioned that there is a cocktail that carries my family name. Later, he tracked me down and had a copy of the recipe and offered me one. He always recognized me and said hello, shook my hand, etc. when I visited. My wife and I had a drink there the day before we got married. The drinks are great and vary with the season. They find and reproduce old recipes and are quite serious about getting everything right. They make many of their own syrups and flavorings. It's fun just to watch them at work. The drinks aren't cheap. Americans will blanch at the price but they are no more expensive than the crappy margueritas at Planet Hollywood near Tivoli. I recommend it as a great visit to anyone coming to Copenhagen. read more

This is my favorite cocktail bar in Copenhagen, period. Yes, there are many other good ones (bar7, 1105, Lidkoeb...) but Ruby is truly special. I love the exclusive feeling, the always friendly and attentive staff, and of course the amazing drinks. They change up their menu every now and then, so you can discover something new. Friday and Satuday, they also open the basement, which is located behind a giant old vault door. There, you can lounge back in leather chairs, surrounded by walls full of specialty spirits, and enjoy a cozy conversation. I also like to ask them to mix up something that's not on the menu - the talented bartenders will whip you up a great drink from as little description as "something fruity with gin". My sister is a huge fan of Pastis, and the bartender made the most delicious sour for her on the base of that rather challenging liqor. Yes, it's not cheap, but do swing by there for a drink or two, it is so worth it! read more

I stopped by here on my first night in Copenhagen, what a great idea that turned out to be. Ruby is located on a picturesque street (which is most streets in Copenhagen) right on a canal. The entrance is somewhat difficult to find but not hidden like a speakeasy or anything like that. Inside looked rather large but I confined myself to the bar, it had a bit of a mid-century modern feel to it and a nice view to the canal. I wouldn't go if I were dressed in shorts and a t-shirt but jeans and nice button-down shirt will fit in just fine. The staff immediately greeted me and offered a glass of water. The male bartender told me I came on a good day, I could be their guinea pig for their new spring drink menu which they had just introduced earlier in the evening. The two drinks I had off the spring menu, the Goosebumps and the Hip Hop Oloroso were excellent. All the drinks were excellent. The bartenders were excellent, especially the incredibly friendly girl from Southern Italy who's name escapes me right now. She was quite possibly the best bartender I've met, she made incredible drinks, showed me how to make my favorite drink (Old Fashioned) and even introduced me to a new drink that might possibly be the best I've ever had, a variation on an Old Fashioned with chestnut liqueur and scotch, out of this world good. I can not recommend this place enough, 5 stars in every aspect. read more

My friend and I were fortunate to arrive on a Monday evening, so the place wasn't very crowded and we could find two seats right at the bar. It was a perfect view for watching the bartender - who was friendly and conversational - make craft cocktails for us and the few others in the place. I could kind of see where the vibe the bar gives off on a more popular night might be hipster fabulous; but on a Monday evening around 10 pm, it was just a great place to have a couple of (pricy! but delicious!) nightcaps. read more

The vibe inside was really nice and swanky, and it was a great start to our evening. It's around $16 for a drink, but so worth it if you're visiting Copenhagen. Maybe the 2 cocktails we had don't represent the full menu, but they weren't anything special, and frankly if I order a cocktail I want to taste the alcohol in it. The place was easy to find. It was packed when I walked in on a sat evening just after 5pm. Service was good. Unfortunately the cocktails were nothing special & you can hardly taste any alcohol in them. All alcohol is measured. Also, our two cocktails arrived about 3 mins after we placed our order. It's definitely an experience to go to Ruby. It's a rather fancy (no sandals allowed) , rather pricy cocktail bar. Ruby is usually quite crowded so if you go, go early. In the summer they have nice outdoor seating in their courtyard. However, the cocktails have not really convinced me. read more

A gorgeous bar with incredible cocktails and service. Our server was so on top of his game, always making sure our water glasses were full and that we could order more drinks when ready. The space is multi level with a lot of cozy seating on sofas or arm chairs. The people were all well dressed and happy. Get here early or you'll be in line a long time to get in. read more
