The only issue I have is that our food arrived amazingly fast I mean like maybe under 5 minutes post ordering. After that the staff kept coming by asking if they could clear my plate because I eat quite a bit faster than my companion, my wife. They asked me two to three maybe even four times if they could clear my plate which really was unwelcome since we had 2 hours to finish our meal. As I stated earlier the food was really really good if you check out my photos the atmosphere was really nice. I am an architect and can really appreciate nice design and configurations. I would gladly go back and run to recommend this place I do know my wife stated the same issue I outline regarding being rushed and they said that they would adjust it. I would gladly revisit the establishment and when we return back to the Valencia I plan on going there once again. I highly recommend it especially the steak that was very well cooked perfect for our desire which was rare.

My kids are both pretty picky, but my younger son is worse and almost never eats anything. He did however eat all his tapas here. We had all sorts of basque tapas, all delicious. I absolutely loved the food and feel they had a tapa for everyone and all palettes. My favorite was a Spanish sausage (I don't believe it was a chorizo) on bread that got brought to my table. Usually you go pick up a pincho and put it on your plate, but similar to a Rodizio they bring things to your table and offer more each tapa is €2.80. I absolutely loved our server, she was very helpful and very nice to us at our table. Finally, I also absolutely loved the locale. It was dark, but the wooden tables and high chairs really set a warm comforting mood and I absolutely loved the lighting.

For example, the last time I went by Pincho y Corto, my friends and I decided to come back for the "cocido" on a future date. Six-and-a-half hours later, we left the restaurant after enjoying a delicious meal. A cocido is usually MEAT, MEAT, MORE MEAT, AND MEAT ON THE SIDE. However, for me, the owners prepared an incredible set of vegetarian dishes that made me very happy. For the first dish (primero), there were blue-cheese-stuffed mushrooms that had been heated perfectly to melt the cheese, along with croquetas de calabaza, with the perfect amount of crunch and savory goodness that made this dish stand out. Usually, croquetas are soft little affairs, tasty but kind of mushy. These were perfect, crunch on the outside and tender (not mushy) on the inside. The flavor was savory and a little sweet from the calabaza. For the second course (segundo), the vegetables in broth were perfect. Garbanzos, carrots, potatoes, and wilted greens made this dish both colorful and tasty. I enjoyed the broth, too, which was a nice complement to the vegetables and replaced the soup that the rest of the table received as the third course. For dessert, there was this puff pastry drizzled with chocolate and dulce de leche (I think... it was hard to tell) that the entire table ate with gusto. Coffee, drinks, and plenty of conversation made this a memorable meal. The total time at the restaurant was 6.5 hours... now where is my badge?
