Two telltale choices: the octopus was very tender, an easy one to get wrong. And the tuna sashimi, so often victim to dry, opaque squidginess, was deep and vibrant in colour, retaining the moist bite of fresh fish. Added to the essentials when in town.

It was very nice to be able to see the chefs at work, slicing and dicing, and the plating up right in front of you. The teppanyaki that followed were equally good, with a preference for my beef order accompanied by tasty mushrooms and a flavorsome jus. Prawns were no showstopper but weren't in any way bad. Good food here, and proof you don't need to be Japanese to master the iron griddle and cook good food. The Belgian head chef does a fine job surrounded by his Japanese team.
