The dish was noticeably over-salted, while at the same time lacking the spices and depth of flavor that I associate with authentic Jamaican cooking. Jamaican curry chicken should have layers of flavor from the curry, thyme, scallion, garlic, ginger, pimento, and other traditional seasonings. Unfortunately, those flavors were largely missing. The meal tasted more salty than seasoned, and it lacked the bold, rich, authentic Jamaican flavor I was expecting. I understand that recipes and tastes can vary, but when you're looking for Jamaican food, authenticity and proper seasoning are a big part of the experience. Hopefully, the restaurant takes this as constructive feedback and works on balancing the salt and bringing more of the traditional Jamaican spices and flavors forward. The restaurant's name comes from the preparation process: after choosing your ingredients, everything is placed on a cutting board and chopped with a unique rounded knife, which was very satisfying to watch. The Chicken drumstick and the fish morsel were deep fried separately then added to the stew later before serving. The chicken was really good with a teeny crust from the frying, and moist and juicy inside, but I have got to hand it to the fish. It was moist, flaky, flavourful, and reminded me of all the river fish I grew up eating. PS: I read that it is considered ill-mannered to chew the fufu. One usually swallows the morsel without any chewing. And I can see why.
