Mussels are picked locally from the island waters. The kokorech is prepared the right way and thoroughly cleaned. There are only few places you can safely eat (as a tourist at least) kokorech in Istanbul (e.g. Huseyin Usta Kokorech, Sampiyon Kokorech) and this place is one of them.
I have been eating at Huseyin Usta going back 30+ years, and even though I now live in Los Angeles I still miss the delicious kokorech and the fried mussels and make it a point to stop when I am in Istanbul.
Try both and I guarantee you won't be disappointed!
